COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Bottle. Pours a golden-amber with a large, lingering white head. Aroma is citrus, grape, and that wonderful wonderful funk. Flavor is tart fruit dissolving into sweetness and that sublime funk again. It’s a great lambic, and I’m really becoming a big fan of Cantillon.

UPDATED: FEB 22, 2009 750ml Bottle (2004 Vintage): Aroma of tart fruit, yeast, funk, citric acid, white grapes, toasted citrus, and muscat. Aroma makes my mouth water. Poured gold.light amber in color with a large, dense head that diminished but lasted throughout. Clear. Very sparkling. Flavor is medium tart, and slightly sweet. Tastes of wood, tart fruit, oak, grapes, light funk, citric acid, and just barrel. Light to medium body. Thin, tingly, dry texture. Lively carbonation. Tart, fruity, citric acid finish is dry and a bit sticky.

I’ve seen this beer before and wanted to try it but Cantillon 750’s are a little pricey $15-$25. Luckily I found this in a 375ml for $10 and who really needs more than 375ml of lambic or gueuze? The label read vintage 2005 and the cork read 2007 so three years old now. The cork was pretty disgusting, beginning to rot with a gross black liquid bubbling out of the cracks! Oddly, this did not deter me and seemed sort of normal...Anyway it looks like a gueuze, golden orange hardly any bubbles. It smells nice, fruity and malty with a slight earthiness. The flavor is bitingly sour, dry finish, dusty grapes, I think I taste hops? Serving type: bottle Reviewed on: 08-30-2008 02:14:10
