Commercial Description:
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

2003 vintage, bottled in 2004 according to the cork. Hazy golden, big head that reduced to medium, fine bubbles. Definite lambik aroma with hints of wood and cheese. Tart fruity flavours, good bitterness ending with a very dry, woody finish. A truly great complex beer

Vintage 2003. It’s a fantastic orange golden and slightly hazy color and a nice, creamy head. The cork tells me that this one was bottled in 2002, and now it’s November 2006. The aroma and flavour is acidic, not just acidic, extremely much so!! I do get notes of fruit too, but the acidity leads me to believe that it takes a much more hardcore lambic lover to cherish this one, than I am. 1704

750ml - 2003 - thanks MrWalker - Happy New Year 2007! - Aroma is sour lemon, horse blanket, hay, yeast and dust. Pours transparent orange-brown with a big head and good lacing. Flavor matches aroma with more malt to balance it out. Bit of incense in the aftertaste. Palate is tart and smooth. A bit thin but still very flavorfull and tasty.

Vintage 2003. Orange amber hazy colour with a small white head. Fruity herby little sour and yeasty aroma. Full body, little sour. Finish is herby and fruity with a distinctive bitter-sour touch. Little tart as well. Very special and strange beer, but rather good anyway.

Bottle. Hazy orange body with a small off white head. Musty, yeasty aroma with light notes of lemon rind. Flavour is a bit quick - falls of the tongue at a rapid rate with only a fleeting glimpse of light malt, and mild lemon citrus, and very muted musty funk. Lingering astringent lemon after a dry bitter finish. Average palate. Not unpleasant but does not make me crave another. A graduation/Christmas gift from some friends including DuctTape and TheRoot, shared with Mabel and Tuqueboy at a Christmas function.

Bottle, Vintage 2004. Pours cloudy golden orange, with a white head. Aroma is yeast, spices, fruit, and funk. Flavors are lemons, hops, yeast, spices, other fruit, and a bit of funk.

Vintage 2004 bottle from my secret santa. Thanks, I love cantillons. Pour is cloudy, hazy orange with small head that fades in seconds. Lots of carbonation, initially. Nose is tart and hoppy funk. A much chewier and deeper body than any cantillon I have had to date. Flavor is barnyard funk with spicey chewy hops. A unique Cantillon.

Bottle. Unblended lambic. Haxy yellow colour with a big bubbly white head. Quite hoppy and very sour vinegar aroma with some sweetness. Flavour is sweet, then sour, very sour, and then dry. Quite a sour mouthfeel. A VERY different beer! One a real beer lover must try, no matter what.
