COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

heavily herbal and floral in the aroma, the taste is fizzy taste is tart but not overpowering sour. The herbal come through the taste, for those who are reluctant against Lambics

The aroma is woody with cedar, herbs, wild yeast, lactic bacteria, funky bathroom smells, and leaves. The appearance is cloudy red/tan with a nice head. The taste is like the aroma. The palate is thin. Overall it’s not good.

Bottle, 2005 vintage. Soapy and perfumy aroma, reminicent of a mens urinoir. Only then can you spot the hops. Sour and mouth-puckering palate. A bit one-dimensional. 3/4/6/4/11 - 2.8. Bottle, 2003 vintage Funky aroma of horseblanket and sulphuric acid. Very acidic taste with a hint of urin. Quite bitter aftertaste. Nice. 8/4/6/5/14 - 3.7.

UPDATED: JAN 25, 2010 Pours a hazy orange color with darker brown swirling through. Lots of effervesence beneath an off-white head that had nice persistence. The aroma was tart, mild funk with the hops definitely coming through. The flavor was tart, mild funk, cedar, earth, floral hops, piney hops. Clean, dry mouthfeel and a razor sharp finish. Quite enjoyable.

UPDATED: JUL 27, 2010 2005 bottle. Aroma is of extremely dirty socks and funky molded moss and rotten wood. Taste has more sour than the rotten funky aroma but still not pleasant. Not what I was expecting and if this is not how it should taste I would like to try it again. Way better experience this time. Not as funk nasty but actual brett and sourness.

My first and most likely last unblended lambic. Pours an orange caramel like color with a relatively large fluffy tope colored head. Nose is funk, grass, honey and citrus. Taste is about the same with a nice wild honey component. I don’t really care for lambics but this was decent. Somewhat dry finish as well.

UPDATED: JAN 7, 2009 Vintage 2005. Hazy orange pour with a quickly dissipating head. Nice tart aroma. Loads of citric sourness combined with a hint of grassy hops, and banana

UPDATED: AUG 7, 2008 Bottle, 2005 vintage. Pours orange with just a bit of haziness, fizzy off-white head that disappears post haste. Aroma is a bit of sharp sourness, fruity - i got strawberries, just a bit musty. Taste is sour, sharp but not overwhelming, softened by the musty, earthy quality that comes in after the initial carbonation burst passes. Finish is a bit of citric, lemony sourness and a bit of a grassy, floral note that emerges from the sourness. Crisply carbonated, light body.
