COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Bottle @ Yngwie’s, courtesy of Yngwie. Thanks man! :-) Slightly hazy orange body, virtually no head. Nose is bretty funk tones, lemon, sweat, floral tones and hints of grapes, sour socks (but in a good way!) and raw straw. Intense and nice. Taste is sweat, lemon, stale barnyard funk, hints of metal, straw and dry, grassy hops. Intense, well-rounded (probably due to the age) and very nice.

Pours a golden amber colour with a thick off white head that clings to the edges of the glass. The aroma is oak vanilla little sour notes. Taste is crispy sweet almost like a sour apple juice.

flat looking, golden fluid. pale haze laced throughout. nose of rotting wood, vinegary grains, slight yeast, and interesting floral characters. complex to say the least. taste was very hard to rasp cue to the flatness of the beer. not sure if it was supposed to be that way, but it was not enjoyable on the mouth, and tended to disable the flavors, but I caught musty earthy hops that tasted dead in the bottle, some light sourness that came across very astringent and full of tannins, puckering, pickled-type flavors happening. unique, but not my favorite.

UPDATED: JAN 27, 2012 In bottle at The BrewDog Bar, Edinburgh. Pours a cloudy golden colour with a lacy white head. A lovely aroma of lemon, horse blanket, barley, hay, wet cardboard and a very light balsamic vinegar tang. Similar flavours, quite tart with lemon and a mild dry balsamic vinegar quality again. Barley and hay characters also. A tart finish and linger. Mild carbonation and CO2 prickle. Very nice. 2005 bottle, thanks Craig. Lovely musty aroma, mild balsamic vinegar although this has settled nicely. Similar flavours with dry Granny Smith apple skin also. Lovely!

Bottle. This Was pretty wild. Even for a lambic. the sourness, and bitterness were impressive. Unbelievable acidity on the tongue and on the inside of my neck as it went down. This beer provokes a grimace but is in fact - excellent. The hops are present but in a different way to an IPA. A challenging and rewarding bottle.

Typical gueuze aroma though perhaps a little more grainy. Fantastic flavour. Dominant sourness.

from bottle. Pours orange, no head. Very nice lambic aroma and taste with a hoppy afterthought. Very acidic

Bottle split with mcberko. Pours a cloudy rich orange with virtually no head. Aroma of cider vinegar, funk, sour fruits. Flavour of cider, sour fruits, funk, banana, Well balanced, nicely carbonated. Really good.
