The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Sampled at Stoutfest. Label says its a 2007 vintage, but the cork says its 2010. I am gonna go with this being a 2007. Pours a hazy orange in color with maybe a quarter fingers worth of tight white head. Nose is exceptionally balanced. There is lemon and a fair amount of floral character to it. It resembles a Cuvée des Champions or Saint Gilloise in my opinion. Flavor starts out with some bright lemon and then immediately turns to the floral aspect of the beer. It’s gentle grass and tartness....exceptionally balanced. Mouthfeel is light, carbonation is gentle, as well as the acidity, a moderate finish. Never had this before, but I am a big fan of this. I enjoy the floral character of the beer quite a bit and it adds some nice complexity to the lambic.

Excellent lambic, slightly different than traditional, orange dark orange hue. Great apple barnyard aroma, cellar taste of oak and wine with huge tartness in the dry finish. Live this one.

750ml bottle from BD ShepBush, bottled Mar 2014. Clear orange, small head fades quickly. Nose of fresh herbal hop, cheese, citric acidity, funk. Medium acidity, lemon, cheese, funk, very dry, moderate bitter, fresh herbal hop. Medium light body, oily feel, softish carb, loooong sour finish with all that cheese and lemon and a touch of hop. Wonderful.

Cloudy bright amber colour with a small off-white head. Tartness, sourness, red berries, acidity, floral hops, some sweet notes and mild maltiness in a wonderful aroma. Absolutely divine aroma. The flavour is much more sour with some tartness, red berries, mild hops, mild bitterness, vinegar, acidity and mild maltiness. Tasty and rather complex brew.

Straw colored pour. Big white head that falls quickly. Lacing. Sweet sour aroma. Hoppy and funky. Taste is a tart bitterness with funk and malt.

Vintage 2013, vieillit un an. Bon goût de chêne et très acidulée. Longue amertume florale qui doit venir des iris. Pas ma préférée de Cantillon mais tout de même très buvable.

Bottle. Pours hazy orange with a medium and slightly offwhite head. Aromas of some funk, some hops, slight vinegar, some barnyard and slight leathery notes. Some sour grapey notes in there aswell. Taste is pretty funky aswell, some sour grapey notes, green apples, hops are very present, slight leathery notes aswell alongside of some very barnyard-like notes. Delicious, ’simple’ sour.

2014 vintage. Orange color with small but beautiful and stable head. Funk and hops in the aroma. The hops are very present. Cantillon funkiness. Taste is lambic, sour finish and with a lingering bitterness. Dry feeling, and with just the right small amount of carbonation to make it not boring. Amazing. A hoppy lambic, damn! A true masterpiece. And a great beer for my 200th rating!

Pours a golden/copper color with a fizzy white head that fades quickly. Aromas of earthy funk, hay, spice, floral notes, lemon peel and wet oak. Taste is fairly acidic and dry. A crisp bitterness couples with a nice funk...melds into a nice citrus tartness and earthy spice. Nice, dry vinous finish.
