COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Sampled at Stoutfest. Label says its a 2007 vintage, but the cork says its 2010. I am gonna go with this being a 2007. Pours a hazy orange in color with maybe a quarter fingers worth of tight white head. Nose is exceptionally balanced. There is lemon and a fair amount of floral character to it. It resembles a Cuvée des Champions or Saint Gilloise in my opinion. Flavor starts out with some bright lemon and then immediately turns to the floral aspect of the beer. It’s gentle grass and tartness....exceptionally balanced. Mouthfeel is light, carbonation is gentle, as well as the acidity, a moderate finish. Never had this before, but I am a big fan of this. I enjoy the floral character of the beer quite a bit and it adds some nice complexity to the lambic.

Vintage 2013, vieillit un an. Bon goût de chêne et très acidulée. Longue amertume florale qui doit venir des iris. Pas ma préférée de Cantillon mais tout de même très buvable.

Bottle. Pours hazy orange with a medium and slightly offwhite head. Aromas of some funk, some hops, slight vinegar, some barnyard and slight leathery notes. Some sour grapey notes in there aswell. Taste is pretty funky aswell, some sour grapey notes, green apples, hops are very present, slight leathery notes aswell alongside of some very barnyard-like notes. Delicious, ’simple’ sour.

2014 vintage. Orange color with small but beautiful and stable head. Funk and hops in the aroma. The hops are very present. Cantillon funkiness. Taste is lambic, sour finish and with a lingering bitterness. Dry feeling, and with just the right small amount of carbonation to make it not boring. Amazing. A hoppy lambic, damn! A true masterpiece. And a great beer for my 200th rating!

Pours a golden/copper color with a fizzy white head that fades quickly. Aromas of earthy funk, hay, spice, floral notes, lemon peel and wet oak. Taste is fairly acidic and dry. A crisp bitterness couples with a nice funk...melds into a nice citrus tartness and earthy spice. Nice, dry vinous finish.

Barwa: pomarańczowa, idealnie klarowna (zamglona dopiero po dolaniu). Piana zabarwiona (żółto - biała), dość obfita, jednak szybko opadająca. Aromat: wyraźnie kwaśny, nieco drewniany z akcentami przysłowiowej końskiej derki, ale dość łagodnym, bowiem piwo jest stosunkowo młode. Lekki akcent ziołowego chmielu, który z czasem się wzmaga. Występuje także nuta cytrusowa oraz rozpuszczalnikowa, co sugeruje octan etylu. Smak: wyraźnie kwaskowe z bardziej wytrawną kontrą i goryczkowym, nieco drewnianym posmakiem. Goryczka zdecydowanie wyższa niż w stylu, początkowo trochę zalegająca i przeszkadzająca. Po chwili nieco mniej drażniąca. Średnio lekkie, raczej nisko nasycone, cierpkie i trochę ściągające. Kolejne "ksiązkowe" piwo z browaru Cantillon, jednak nie jest to klasyczny lambic. Został bowiem uwarzony z wykorzystaniem 100% słodu pale ale oraz dodatkiem świeżego chmielu. Barwa jest zatem zdecydowanie ciemniejsza, a goryczka wyższa i przynajmniej początkowo niezbyt przyjemna. Nie jestem przekonany co do tej kombinacji.

Bue en bouteille de 75cl à la maison, couleur ambrée, belle mousse grosse effervescence, une bière avec un nez houblonné et acide. En bouche gros mélange des deux saveurs, on sent l’acidité du citron et le tanin. Grosse astreingeance super agréable. Fin sur le réglisse. Trop Bon !

2004 vintage: Well, yeah, this is one of the greatest beers I have ever had. Huge funk on the nose: typical lambic notes: barnyard funk, lots of wet hay. But also that smooth cantillon character that makes the minerality seem less abrasive. In the mouth the thing is just divine: tart, has a strange flowery subtlety underlying the funk which is just insanely well integrated to the tartness. At a loss for words: a total stunner.
