COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Sampled at Stoutfest. Label says its a 2007 vintage, but the cork says its 2010. I am gonna go with this being a 2007. Pours a hazy orange in color with maybe a quarter fingers worth of tight white head. Nose is exceptionally balanced. There is lemon and a fair amount of floral character to it. It resembles a Cuvée des Champions or Saint Gilloise in my opinion. Flavor starts out with some bright lemon and then immediately turns to the floral aspect of the beer. It’s gentle grass and tartness....exceptionally balanced. Mouthfeel is light, carbonation is gentle, as well as the acidity, a moderate finish. Never had this before, but I am a big fan of this. I enjoy the floral character of the beer quite a bit and it adds some nice complexity to the lambic.

Slightly hazy dark golden with medium white head. Strong aromatic hops on the nose at first. Taste is dough, sour bread, lemon, wood, funk, hay, pine. Really present aroma hops like a lambic IPA. Very dry and sour with deep bitter finish. Medium bodied with very lively carbonation. Great stuff.

2010 bottle thanks to Mike. Pours a cloudy orange with small frothy off white head that diminishes quickly. The aroma is strong funk, yeast, citrus. Thin mouthfeel with nice tart floral hop and light spice with lingering dry finish. Easy to drink, wow really enjoyed this one.

Hazy amber with a small white head. Slightly tart aroma with fresh herbal hops and some light malt. Taste is light, fresh, tart, slightly fruity hops. Thin body, soft carbonation, dry. Woody after taste with some bitterness.

Bottled 17 March 2014. Thanks to Rian for bringing this bottle from Brussels. Funky horse-blanket in the nose, together with floral hops. The beer starts smooth, fresh. The bitterness and sourness turn in very fast, the bitterness is very intense and remains as a layer below all other aroma. There is a funky horse-blanket sourness, intense and sour with the smooth woody character. The aftertaste is bitter, fruity horse-blanket, woody-sourness and has hints of fermented hay. Very intense and complex, tastes like a wet horse-farm. 13/12/12/13

Bottle, 75cL. Home. A sparkling orange beer with brown hues. Medium white head, poor persistence. Thin bubbles. Fruity aroma (acid ones), wood, vanilla, smoke. Medium lasting sourness, refreshing. Light body, medium texture, average carbonation, herbal sour finish. Overall, nice beer, good sourness unusually "wet" : other Cantillon beer are dryer.
