COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

750ml green bottle, corked and capped. Amber coloured liquid, cloudy. Not much of a head, what is there fades away quickly to a few surface bubbles. No lace. Nose has a light leathery component to it with a lemony, tart edge. Flavour has some sweat, brett, tart grapes. Tart and citrusy finish, acidic and dry. Medium bodied, low carboantion. Consumed outside on a warm, sunny spring day.

Bottle, 75cL. Home. A sparkling orange beer with brown hues. Medium white head, poor persistence. Thin bubbles. Fruity aroma (acid ones), wood, vanilla, smoke. Medium lasting sourness, refreshing. Light body, medium texture, average carbonation, herbal sour finish. Overall, nice beer, good sourness unusually "wet" : other Cantillon beer are dryer.

Bottle from Mane Liquor. About a year old. Pours a dense and bright reddy orange with a small white head. Nose is very floral and grassy with plenty of citric tang, moderate funk and orange. Taste is quite funky with notable notes of straw and lemon myrtle while the floral, almost herbal notes come and go balancing everything out. Grassy and earthy with considerable tang. Bottle from Proof. Orange pour with a frothy white head and loose lacing. Aroma of lemon, wood, hay, yeast, funk, orange peel. Tastes are along those same lines with a tart apple vibe and some vinegar. Solid even sourness. The palate is near perfect - tingly medium carbonation and creamy. Lightly dry and floral in the finish. Yeah, expensive, but very very nice.

Pours a murky orange copper with an off white head that settles to a film. Aroma of grapes and apples with some grassy hop character and some earthy and funky flavors. Taste has a tart, fruity flavor with some tannic and oaky character. Has a cheesy flavor and some earthy and grassy hop taste. Finishes dry with some cheesy and slightly bitter hops. Mouthfeel is crisp with a light/medium body and high carbonation. Wonderfully balanced and complex flavors. Very refreshing and drinkable. Not your typical Geueze.

Muddy murky copper color with a swirling of white head on surface. Smells of skunky funk, perm, spiciness of the Belgian yeast, soured fruit, banana, bubble gum, caramel malt. Taste is dry cheese like taste with a medium sour bite that dissipates quickly, some sour hop bitter at the end, citrus, some spice, a little vanilla and caramel malt.
