Commercial Description:
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Aroma smelled like a fermented barnyard. Body was cloudy orange with a big head that left lots of lacing on glass. Bitter and sour taste was a downside for me. Reminded me of drinking cheap rhine wine some years ago. Had a dry aftertaste to the beer. Alright after work but not the best.

Beer 14 of the tasting. This has quite a bit of bite, not as much as the Hannsens. A simpler lambic in complexity, it seems fairly smooth as well. Good stuff. Love that sour bite.

Extremely sour, lactic nose and taste. Smells almost like a clogged drain at first - better to let it breathe. Cloudy orange-brown color and very fizzy. Grapefruit-like tastes. Deposits a sharp dollop of sourness on the roof of the mouth before the swallow. Chalky finish that evaporates quickly. Challenging but worth the effort.

37.5cl bottle, 2003 vintage, via magic_dave6. Pours a slightly hazy dark gold body under a thin fizzy beige head that settled to a wispy covering. Some light visible carbonation. The nose is full-on classic Cantillon funkiness. Moldy basement, barnyard, just light sourness, stinky feet, and just very earthy. The flavor is very sour and incredibly funky. It’s kinda like licking sweaty feet, yet I love it! It’s just so raw and and untamed. Not as cheesy and acidic as their gueuzes, it tastes old and relaxed. A little oakiness on the finish. Mouthfeel is bone dry and sharp with nice soft carbonation, just enough to keep it interesting. This was pretty great. Just all funk and minimal acidity, my prefect Lambic. Could have gone for a 75cl bottle of this bad boy.

Bottle shared with blankboy, tupalev & HogTownHarry - tupalev’s bottle. Reddish sunset gold with a small white head. Tart funky nose with some prominent herbal hop notes. Flavour is simple by Cantillon’s standards, but is still very nice - has a subdued funkiness and mellow tartness, with some lemony notes, a bit of malt coming through, and a lingering bitter finish. A very interesting variation on a lambic - glad I could try it.

Rerate, 750mL bottle, 2004 vintage, courtesy of wickedpete. Thanks, Pete! Pours a bright, hazy golden-orange color; very light tan head with fine-bubbled lacing. Intensely funky, sour citrus and horseblanket in the aroma; clear, dense, tart and funky citrus-dominated nose. Medium-to-full mouthfeel: following the nose, loads of tart, funky citrus, salt, lemons and overripe fruits; intensely flavorful, nicely carbonated, salty, and funky citrus-dominated lambic. Lengthy, sour finish: citrus, funk, lemons, and breadiness; solid levels of acidity throughout. Tasty, generous stuff. 8.4.8.4.15=3.9

Draft, Max’s 3rd Annual Belgian Beer Festival, courtesy of artusory. Clear, yellowish-orange appearance; headless. Huge amounts of funk, horseblanket in the aroma; lemon and tart citrus. Huge, tart acidity; uncarbonated; tart citrus and barnyard funk; quick, citrus and funky finish. 8.3.6.3.13=3.3.

Well after rating number 2000 I guess the Columbus crew felt I should finally complete my styles so Sliffy and Puddintane and Beervirgin72 all brought a bottle of this - Thanks! - Pours cloudy amber with a slight white head. Aromas of swiss cheese, hay, and some grass. Flavor is cheese, sourness, a little candi sugar, and a touch of oak. Acidic and sour on the palate with a dry finish.

Bottle, from Slob. Holy MOLY! AN UNBLENDED LAMBIC! Thanks again, Slob! Pours deep cheddar-orange with an ample head that leaves a fleeting network of lace. An aroma of crisp lemon immediately is evident as soon as the first drop hits the glass. Flavor is a very tart and tangy lemon/orange/lime. Notes of straw and grapefruit are an afterthought, but only after asserting themselves ever-so-briefly. Very floral and rounded. Mouthfeel is almost carbonated in feel, though the beer itself is only slightly carbonated. Probably the tartness and sharpness of the ingredients. As my first unblended, this one is dang good.
