Commercial Description:
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

2005 bottle. Pours a hazy orange/yellow, fizzy white head. Fruity, grass, honey, funky leather, and a nice biting sourness. Tart green apples, lemon zest, and hay. Very nice.

2004, 750 ml bottle, from Fin. Thanks so much for this mate! Under the foil wrapper, a dusty layer of grime. The cork, under the cap, responds to the lightest touch of the corkscrew with a hiss. Excellent--I love a hostile beer! Clean white head on an warm orange pour, the malty orange color I associate with octoberfest beers. A nice touch of haze. A first sniff is funk--lovely peppery wool and dry red earth smell, a grape skin tannin touch. But around all that is an unusual sweet note--not sweet like candy, but sweet like spring air, etherial and soul-stirring. And I know this sounds nutty, but I feel like deep underneath there is a trace of gentle biscuit malt. Initial bracing grapefruit sour flavor gives way to herbal, peppery notes. The sourness blends very cleverly with an earthy bitterness that lingers into the finish. A subtle, elegant variation of the classic lambic formula. So refreshing. Mmmmm. I’m very happy this is the big bottle.

2004 bottle. Mmmmm....feet and lemon juice. Hazy blond. Lemon rind in the distance, not up front. Past it’s prime, the store I bought it from had it out of refrigeration, just sat it on a shelf. Still good. but not the monumental experience I first had with a 2004 bottle a year ago.

Hazy golden color, light acid aroma, heavy acid taste, medium body, dry finish. The flavor was sour and fruity and there was no lacing.

Bottle: Iris 2005: Clear light red colour, nice white head. Aroma of fruits, citric, sournes, and a nice balnced with a nice fruity sweetnes, and a nice citric nose. Flavor is almost the same, but has a kind of smokey(?)fruity endig. Thin to medium body, and a thin to medium finish. Nice Lambic!!

Peach in color with a fizzy off white head. More carbonated than others I’ve had from Cantillon. Funky, lightly tart anf floral aroma with an underlying English Pale Ale smell. Has some hints of moldy wallpaper. Very sour and lean in flavor but still with a nice body. Fairly bitter with noticable tannic finish.
