COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

UPDATED: OCT 20, 2014 This one also deserves a re-rate, now that iím more into the style of lambics . Had this one again at cantillon brewery . Only had this twice. Before I was into geuzes, and just now . The bottle I drank now was magnificent. Yu can really taste the grains, together with a complex sour , funky touch . All comes very nice in balance together . Lovely beer . Will also try to re-rate as I am sure as hell will have this again in the future !

Awesome unreal green apple sour tart and peach aroma. No real head but some little bubble fizz. Taste tart and acidic. Some sour be easiness and sour Chardonnay light oakiness and funk. Perfect example.

Bottle shared @ De Heeren van Liedekercke, Denderleeuw - BE. Color: hazy golden amber blond beer with no carbonation and no foam. Smell: sour and aciditty domination. Notes of herbs and grass. Floral finish. Taste: good palate very sweet and sour. Nice beer. Astringent. Finish herbal. Aftertaste: good sour taste, notes of apple.

Perfect lambic. Lemon and barn nose. Tart fruity taste with equal funky cheesy and some oak walnut going on. Finishes tart crisp dry and sour. Could drink for ever.

Bottle. Dark orange color, very small white head, opened with a bang. Aroma of pure barnyard, with tart, hay and a little hop. Taste is really sour, with dry hay, horseblanket and a dry tart finish. Good stuff, but more malty and less creative than the other Cantillons.

Excessive head: a quarter bottle (12.7 oz) filled a 24 oz glass with foam. It settles quickly in a dome-like way, leaving nearly no lace. The brew is dark amber and fully cloudy. A softer second pour resulted in half foam, half liquor. Sweet and sour as one might expect. On the sweet side, thereís caramelized sugar and faint flowers. On the sour side, I detect mild citrus and some yeast. The flavor is overtly tart. Lip puckeringly strong. The finish is a dry bitterness--I donít think itís from any hops. No notable sweetness; this comes across like an unsweetened lemonade. The body is full while the carbonation is surprisingly light. If you like your lambics overly sour, then youíll love this one. Perhaps the sourest beer Iíve ever had.

75cl bottle from Beersínímore, bottling date 18 Dec 2014. Pours orange with a medium head that quickly dies without any lacing. Typical lambic nose, but also fruity. Intricate bitterness, lots of grapefruit, acidic, but somehow it doesnít fit together in my mouth.
