COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

2004 bottle shared @ Spuyten Duyvil for Zwanze Day 2012. Pours a brickish orange color with a puffy white head that quickly settles. The aroma is fuller than most other Cantillons, with the hop character balancing out some of the typical funk and some clear contribution from the malts in a form of almost like toasted rye bread. On the palate, the tartness dominates, but the mouthfeel is rich and there is a crisp zing from the hops. Cool beer.

Bue en bouteille de 75cl à la maison, couleur ambrée, belle mousse grosse effervescence, une bière avec un nez houblonné et acide. En bouche gros mélange des deux saveurs, on sent l’acidité du citron et le tanin. Grosse astreingeance super agréable. Fin sur le réglisse. Trop Bon !

2004 vintage: Well, yeah, this is one of the greatest beers I have ever had. Huge funk on the nose: typical lambic notes: barnyard funk, lots of wet hay. But also that smooth cantillon character that makes the minerality seem less abrasive. In the mouth the thing is just divine: tart, has a strange flowery subtlety underlying the funk which is just insanely well integrated to the tartness. At a loss for words: a total stunner.

Poured 2014 from bottle to glass. Copper honey hue with light white head that dissipated quickly. Aroma is earthy, peppercorn, lemon, grapefruit, funk, pineapple. Mouthfeel is nice with a light body and almost no carbonation. Taste is dry throughout with a bitter finish. Overall this is a nice brew.

2014 Looks.. Orange amber, sml head Smells.. Fighting the barnyard dank are fruity hops, sweet orange citrus marmalade. Tastes. Orange fruits and sour orange citrus, green apple sours, some hop bitterness.

At the brewery after the tour. Pours copper hazy with a medium white head. Aroma of citrus, floral, funk. Felt a little like an IPA to me in a way. Taste followed the nose with lots of floral in there and a nice bitter funk bite to it. Really enjoyed this one as my first Cantillon offering of many.

Thanks northopfrye for this gem. Pours a dark amber. Aromas are sweet and floral...I get a touch of paint in this too. Beautiful. Beautiful balanced sour flavors. Some nice sweetness, woody bitterness, and great sourness. Wonderful stuff.

UPDATED: OCT 28, 2014 2009 bottle. Peach body thin white head. Aroma of flowers and funk some cherries and vanilla. Taste is funky sour with a touch of dryness and sweet floral notes as well. A touch of bitterness in the aftertaste. Fabulous Beer.

Bottle 75cl. White egg like foamy head. Color is hazy tea fruit color. Aroma is urine, bark, gooseberries. Taste is sour, wine, lemon, leaves.

Bottle 0,75l at Delirium Bar, Bruxelles, Belgium. Pours amber colour with a large head. Aroma of spicy notes, lemon rind, elderflower, peaches, some funk and a hint of catnip. Very acidic flavours. Some lemon pith in addition to the rind providing some astringency along with some more peach and floral notes. Nice high carbonation. ---Rated via Beer Buddy for iPhone

Complex beer with medium sourness, mild flower flavor, & tons and tons of barnyard funk. The flavor and palate are enriched by the hops, which are used more judiciously than in most Belgians, yet without becoming the focal point of the beer. Smooth. Perfect in the palate, with an incredibly long, sticky finish.
