COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

2006 Bottle from Etre Gourmet. Pours amber with an off white head that dissipates to a ring. Aroma is stellar - cherries, hay, funk, lemon. Medium bodied with a fine spritzy carbonation. Flavor of pale Belgian wheat malts in the background, with complex flavors of lemon, funk, flower petals, and green apple. Good amount of acidity without going over the top. Sour, acetic finish that is about a 8.0 out of 10 on the mouth puckering scale. I am shocked at how well this is drinking. I am not a fan of cellaring beer, but this is one of the few exceptions. Amazing beer.

Tap. Pours hazy orange with white head. Aroma is fruity, wild, citrus, wheat. Taste is wheaty, sour, fruit on the finish. Light bodied, crisp. Very good.

Perfection, dry yeast funk straw aroma with a pungent lemon grape thing going on. Flavor is sour lemon and slight red wine vinegar. Pretty different hop thing going on, yet made it better. A MUST

At brewery on tap; this wasn’t for me. I little weird, though I am not a true lambik drinker. Aroma color; somewhat floral with a vinegar note .. I would not buy this again myself

-Backlog- Hazy copper with white head. Aroma is funk, lemon and caramel. Slick palate. Aftertaste is dry, sour and some nice malt sweetness in the end. Overall: very nice and easy drinking. Not to much funk.

Had this one at the source: Cantillon Brewery itself. Pours golden, clear, with a nice fluffy white head on top and lots of floaties (got the bottom of the bottle here). Aroma is straw, a bit of tripel-like funky yeast, some vinegar, dryness. Flavor follows closely with funky yeast, straw hops notes, pears, apples, dryness on the finish with lingering grass and yeast funk together. Very light bodied, super crisp, and pretty refreshing. Unique brew with plenty of sour, but also an interesting note with the addition of the cold hopping. Liked this significantly more than I even expected. Good stuff.

2013. Aroma of lemon, wood, sour fruits, barnyard funk. Flavour is vinegar sour, tart fruit, with a dry finish. Really wonderful Lambic from Cantillon.

Unbelievable brew from aroma to finish. Starts out barnyard and wet hay. Big sour grape aroma punches through. Flavor is sour ;peach and wet oak, along with pungent green hop backbone. A++++

Pours dirty brown with a small white wisp. Aroma is tart floral notes, with earthy malt and wet blanket. Taste is sharp tart bitterness but finishes smooth. Oak and earthy malt finish this off nicely. Thanks to Ezrangel for this.

@ Brasserie Cantillon Plus interesante que la Oude Lambik. Les fait de travailler du malt Pale Ale lui donne une coloration ambree. La carbo est presente et forme un jolie petit collet. Les aromes sont toujours aigre et vineux mais viennent s’ajouter a cela des note de cereales caramelises. En bouche elle est plus vivante et un peu moins aigre.

Lambic made with only barley (unique as lambic is naturally a wheat beer) launced in 1998. The iris flower symbolizes the city of Brussels. This ’out of the box’ lambic is also partially hopped with fresh hops, which are normally taboo in lambic world. Thick, rocky, yellowish white head, brownish amber colour, darker than normal lambic or geuze, hazy. Aroma has all the ’agressive’ earthy, funky complexity of sulphur, hay, sweat, wood and fruity esters which are to be expected from Cantillon, along with a more caramel malt sweetness showing its pure barley character. Sour, very earthy and funky taste, very complex like any Cantillon product, but nuttier and more caramelly than usual and indeed hoppier in the finish. Very interesting, though I (conservatively, perhaps) prefer ’normal’ lambic or geuze with wheat.
