Commercial Description:
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

2004 draft, sour aroma, with notes of hay and pepper, flavor is intensely sour with cheese, yeast, and hops in the finish. Enjoyable

375 ml bottle. Amber colour. Somewhat hazy. Medium-sized white head. Refreshing citrusy acidic nose, but with a bold grassy hop background. Interesting balance between intense sourness and sharp pungent hops. Nice balance between the two extremes. Notes of cork and barnyard. Grassy sharp flavours. Malt richness to be found in the middle. Little aftertaste.

1998 slightly hazedvibrant golden brown body. quickly dissolving foamy white head. Tart, intense, slightly fruity and real tanmgy. Some dyr barley character. Citrucy and sour flavor. some saltiness. Full, lively and tart. Bitter, flower petal nose emerges very strongly. Champagne and cider. Most mild and smooth lambic I've ever had

Dark orange appearance with a tall foamy head initially, dying down into a small white film across the top of the liquid. Huge sour nose full of old wood, wine, butterscotch and apricots. Typical face-wrenching sourness throughout the drink, with a spicy and sour finish full of wood and that regular "aged lambic" flavor. I dig this one a lot.

Brought to MrFacto’s ’Tosa tasting by 1FastSTi. Slightly hazy orange body, medium off-white/light cream head. Classic sour Cantillon aroma, musty and earthy with touches of cheese rind and perhaps a hint of toast. Tart, sour, woody, earthy body with light hints of toast and brie cheese rind; sharp and to the point but quickly subsiding and a short aftertaste. I liked this, but all of the brewery’s beers are extremely similar despite the different brewing techniques employed for each one.

2000 vintage. I don’t know whether I’m becoming too familiar with Lambics, but this one seemed quite soft for a Cantillon. Not as funky and musty as some, majoring on lemony citrus and sharp apples (farmhouse cider character comes to mind) with a touch of woodiness. More sharp than sour. Very clean and crisp. Never thought I’d describe a Cantillon as refined, but I’m tempted. It may not be one of the more demanding Cantillons I’ve tried, lacking the sheer impact of some of the more traditional Cantillon offerings, but still very appealing. 750ml bottle from beersofeurope.co.uk

Poured a cloudy, dark amber color with a small, off white head that left nice lacing on the glass. Sweet caramel, butterscotch, horseblanket, sour apple aroma. Dusty cobweb taste, sour apple, lemon, with mild prickly carbonation, I thought more so than the 1900 Grand Cru.

Bottle, Vintage 2004. Pours cloudy golden orange, with a white head. Aroma is yeast, spices, fruit, and funk. Flavors are lemons, hops, yeast, spices, other fruit, and a bit of funk.
