Commercial Description:
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Kind of strange really, very sour yeasty aroma, with hints of parsley, lemongrass and flowers. Quite sour and then bitter, with a grassy earthy flavour, complex and different.

Bottle (750mL, 2004 bottling). Head is initially small, fizzy, off-white, fully diminishing. Body is hazy dark yellow to light amber, bottle conditioned. Aroma is lightly malty (toasted grain), lightly hoppy (flowers, grass), moderately yeasty (cheese, barnyard, cobwebs), with notes of pear syrup, cask wood, and sour apple, hint of honey. Flavor is lightly to moderately sweet, heavily acidic, lightly bitter. Finish is lightly sweet, moderately to heavily acidic, moderately bitter. Medium body, velvety/watery texture, lively carbonation, moderately astringent. Interesting, like a little bit of golden ale splashed into a tank of lambic (definitely more lambic than golden ale).

2001: The aroma is the only great aspect of this beer; It boasts fresh, round floral hop, a little spice, and some earth and iron. Straw-like flavors prevail one dimensionally. Texture is soft along with being typically acidic and dry; tiny bubbles. Back throat bitterness lingers and astringency cuts like a knife. Not quite up to the Cantillon standard.

This beer tastes like a dry, sour-apple white wine that’s rustic orange in color. This is a very unique type of brew and I somehow enjoyed drinking this Belgian even though I’m not a big fan of Belgian beers. One drawback about this beer is at $14 per 25.4 oz. bottle it will burn a hole in your wallet. Otherwise a very good beer indeed!

Pours a lite yellow with an extremely lively carbonation and a champagne-like head. Mild horse aroma with some funkiness and hop sack aromas. Earthy and not on the level of say limburger, but close. An extremely lite and dry, yet soft palate. Oh so sour and dry to the bone. Almonds and vanilla are also present but are very hard to find under all that bretta. If this is too dry try the rose de gambrinus.

Vintage 2003. This was my first unblended lambic so I don’t have something to compare it with. Pours a light hazy orange colour with small white head and fruity nose. Very sour fruity taste at least similar to gueuze (or I’m wrong?), but I’m not sure about other things.
Besides Marko and myself, this beer was tasted by my parents and girlfriend, so here are their comments:
girlfriend-tastes like cider with very tart greapfruit juice
mother-tastes like very sour green apple juice with notes of currant
father-he eloquently said "F..K" with disgust grimace on his face
So till next unblended lambic...

Vintage 2000 bottle shared by Mary. Poured a hazed gold. The aroma was dry and dusty overall but with a definite tartness. Light on the funk with some citrus on the base. The flavor was tart and acidic with notes of citrusy lemon. Funk was there but again leaning toward the softer side. Light-medium bodied.
