COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

12.7 oz Bottle-vintage 2005. Light golden/copper color w/a slight, quickly diminishing head, looks like a glass of champagne. Light, sweet aroma. Had a very tart, acidic flavor to it, w/flavors of cherries, white grapes, grapefruit, lemon & bananas. This one was a bit much for me; glad I tried it to knock out this style, but I’m not sure I would drink it again. Maybe it would be better paired with the right food, although I’m not sure what.

On tap a the Dog and Pony in Renton. I’ll probably come around to this style, and appreciate the "superb acidity" but not tonight. I commented to the bartender that I didn’t like the lemonade so much. She was concerned that someone had hooked lemonade up to the taps.

UPDATED: APR 26, 2006 Bottle sampled at my house for beer night with Stegosaurus. Pours a depp golden color with a white head. Aroma of a white wine, citrus, and fruit and flowers. Flavor is flowers, sweet, carbonation, fruit, with a dry finish. I did not enjoy this, but i did finish it.

This 2001 bottled corked brew poured a very large head of foamy fineto medium sized whire colored mostly lasting bubbles that left behind a minimal lace. The body is softly carbonated hazy and dark yellow brown colored. The aroma is clearly indicative of a flowery dry lambic. The mouth feel is siur dry and full of bitter lambic qualities. The flavor containes notes of tannic acid dry hops dishwater dough and fruity qualities.

Bottle 75cl. A fuzzy orange ale with medium head ans no lacing. Smell is typically acid and moister like. As other lambic from Cantillon this product is very sour, very dry, very bitter, without intensive fruit flavor and with moisture aroma. So for me they products are very less interesting.

UPDATED: APR 29, 2008 the aroma was a sour smoke, but seemingly not acidic. it poured a cloudy dark apricot color with no head. the taste was undescribable, since i didn’t know what any of it was. i should remember not to inhale when i drink this beer. it grows on you as it warms up. but not a lot.

2007 Draft. Poured a slightly dark yellow/orange color - almost like apple cider. Aroma is earthy, very tart and sour notes come through. Flavor is, well, very disappointing. I don’t know - a lot of people seemed to really like it at Zwanze Day 2011 (I’d hate to think it but being $6 for a 4oz pour may have forced them to like it). My friend likened it to something along the lines of fermented dirt. I thought the flavor was a bit astringent, and the palate was not pleasing in the least. Since this was my first beverage of the day (aside from water), my palate was entirely clean.

Bottle at Caspar’s Christmas Cracker with tashi. I think it’s becoming evident that lambic beer isn’t up my street (at least for now - this is only my 302nd rate). Cloudy deep orange appearance. Farmyard aroma with sour fruit. Sweet at first then tart and sour. Smooths out at the finish, but honestly, I just couldn’t get along with this.

Bottled, label said 2000, cork said 2001. Vinegar, oak and very fruity aroma. Golden/amber color, beige head, good lace. Light sweet start, pretty soon an aggresive sourness comes in followed by a nasty bitterness. The flavors are also less fruity than the aroma. Pretty thin actually. Didn’t like it although I’m into lambic a lot and this comes pretty close.
