COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Fresh 750ml bottle, courtesy blazer06. This one pours a cloudy, golden orange color and topped by a small head of off white foam that slowly settles to a thin film and leaves a sudsy wash across the glass. The aroma is really nice showing a good amount of fresh peaches, apricots, and chardonnay grapes that add ample amount of citric acidity. The oak imparts notes of soured wood and vanilla to go with a big dose of floral hop bitterness in the back ground. The typical Cantillon funk is there, but the floral hop bitterness seems to overshadow it. The flavor follows suit and is initially oaky with vanilla up front and then followed by a huge dose of soured apricots and tart white grape skins. There is a good amount of vinous character from the grapes and oak and finishing with a good amount of bitterness from the dusty, floral hops. Really delicious stuff. The palate is quite substantial, which is a change from the typical Cantillon, and very dry and parching with tingling carbonation throughout. This is great tasting stuff, and I love the added hop component. This is a great brew and right up there with some of the other great Cantillon brews.

Leicht trübes orange goldenes Bier mit mittelgroßen weißen schaumkrone. Geruch säuerlich fruchtig, spritzig, Obst. Geschmack angenehm säuerlich fruchtig, tropische Früchte, leicht holzig, lecker.

March ’14 bottle in 1/16. Could have aged much longer. Light caramel brown color. Nose is stinky French cheese (Morbier), fading to caramel malts, old and floral hops. Taste is fairly malty for the style, with quite a lot of earthy tannins. Sour, but balanced and after initial tartness, becomes quite smooth.

Color arancio velato con riflessi dorati, schiuma bianca poco persistente che svanisce del tutto. Aroma acidulo, leggermente lattica, leggero stallatico, legno umido, leggera polvere, mela verde leggera mista a susina acerba. Al palato prevalentemente acidula, lievemente lattica, legno umido e polvere, mela verde, susina acerba, bell'amaro finale dato dai luppoli, presenti anche freschi nella ricetta oltre che essiccati, misto alla sua componente acidula che risulta molto persistente. Nella sua coda fa capolino anche una lieve nota che ricorda il pompelmo. La mancanza di frumento, unita ai luppoli freschi, a differenza di un Lambic classico, crea un taglio netto tra l'attacco acidulo ed il finale amaro. Corpo medio-pieno, mediamente carbonata, oleosa ed astringente.

2013 bottle. Pours a cloudy amber orange with a generous lasting thick foamy head. Aroma of herbs, floral, lemongrass, perfume, some butterscotch, hay. Taste is of lemongrass, floral, oranges, butterscotch, white grapes, dry finish. Dry oily mouthfeel, soft carbonation.

1/11/16 750ml Old Notes (1996 written in Marker next to Iris)-Pours amber with a small head which emits an aroma of citrus, wood, and slight hops. Taste of the same with some sourness, vinegar, and sweetness. This light bodied brew is quite tasty.

Ein wunderbar klassischer Lambic, der einfach nur vorzüglich schmeckt. Sehr ordentlich in der Trockenheit, dazu ein starker Zug nach Essig, dabei jedoch keinswegs sauer sondern im Fruchtspektrum gehalten. Sehr zu empfehlen und mehr als süffig.

750 ml bottle shared at the Hoppy Pub, Thessaloniki. Hazy orange color with off white head. Funky yeasty aroma, wood, barnyard, dusty, light fruity, citrusy, grapes, vinous. Acidic and light sweet taste. Medium oily body with soft carbonation.

Bottle from Rudat in Dortmund. The Lambic has got a cloudy light dirty strawy colour with a medium body and good carbonation. Aroma of acid, vinegar and barn. Taste of wine vinegar, acid, sour and unripe gooseberries, straw, hay and plaster. Very sour finish. Interesting beer.

Hazy yellow colour with thin head and steady round froth. Hay, flowers, vinegar in the aroma. Barnyard, vinegar at first. Oak, wine in the middle. Sourness of the citruses and mingeling on tongue. Really nice and interesting lambic.
