COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Medium orange body with minimal head. Aroma was barny and funky with some sort of rubber eraser notes. Citrus and floral flavour with of course some tartness.

Bottle from 9/3/16. AROMA: The usual Cantillon funk with a musty, dusty, oaky, woodsy, wet, hay and sweet effervescence. APPEARANCE: Deep amber, sappy and inviting rusty look. Nice tight foam and very oily look about it. TASTE: Oaky, sweet candy without being overbearingly sweet. PALATE: Very dry, oaky, woodsy, bitter, sour, sweet residing lingering tannins. Complex as hell. OVERALL: Triumphant.

UPDATED: JUN 21, 2016 The sourness of lambic with a definite malt taste and slightly stronger hops bitterness than your usual lambic. Good carbonation, slightest of citrus and funk and a nice oak tone. Bottled 09.03.2016, temp 5C, bought at brewery.

Clear deep golden color, white lacing. Muted aroma of funk, bittering hops, and lemon citrus. Taste is bitter with minimal tartness. Lively carb, light to medium body, and a smooth texture. The bitterness lingers in the finish.

Quintessence 2016. Almost clear pale amber/dark gold with almost no head. Sweet malts and full floweriness with a light sour vinegar touch, fresh hoppiness. Seeds. Light sweet, medium sour, light bitter. Medium body, light minerals, oily fattiness, but less than others. Low carbonation almost none. Nice.

Color is hazy reddish orange with a near flat white head. Aroma is attacking your nose, with heavy funky notes, horse blanket, floral notes, ocean, algaes, kiwi, green apples. Taste is musty sour with a slight malty ground balanced with light bitterness, flowery feel, minerals, ends in a balanced sourness. Big body, low carbo. Excellent.

Bottle. Aroma is huge oak and herb, some lemon drop, leaves, and flowers. Tastes moderately sour. Big oak and lemon, lots of flowers, mild brett, mild funk, and a hint of vinegar. Solid.
