COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

My favorite from Cantillon! Beautifully hoppy nose with hints of wood. Best when enjoyed at the brewery! A perfect blend of the hoppy ale and lambic tartness. A dry not overly bitter finish with earthy notes. One of the only Lambics made using the true open top fermentation process. A must for true beer connoisseurs.

Bottle 75cl. White egg like foamy head. Color is hazy tea fruit color. Aroma is urine, bark, gooseberries. Taste is sour, wine, lemon, leaves.

Bottle 0,75l at Delirium Bar, Bruxelles, Belgium. Pours amber colour with a large head. Aroma of spicy notes, lemon rind, elderflower, peaches, some funk and a hint of catnip. Very acidic flavours. Some lemon pith in addition to the rind providing some astringency along with some more peach and floral notes. Nice high carbonation. ---Rated via Beer Buddy for iPhone

Complex beer with medium sourness, mild flower flavor, & tons and tons of barnyard funk. The flavor and palate are enriched by the hops, which are used more judiciously than in most Belgians, yet without becoming the focal point of the beer. Smooth. Perfect in the palate, with an incredibly long, sticky finish.

750ml bottle served in a Flute glass. Bottled in 19th of January 2010. By the way, a 6% ABV and not 5%, as described above. A: Pours a deep orange to amber cloudy color forming a big fizzy bubbled aired beige head. Medium to low retention and many lacings and chunks of foam around S: Sweet and fruity with the strong presence of the characteristic Lambic yeasts. Tart, but not aggressively T: Really smooth and intense. Mild sweet caramel upfront. You can actually feel the caramel malts and hoppy bitterness. Fruity, with notes of white grapes and apples, mainly. Metallic. Excellent sweet-tart-bitter combination M: Light to medium body. A bit creamy and heavier than her sisters. Upfront is mild sweet passing through the tartness and leaving a pleasant mild tart-bitter aftertaste O: Absolutely drinkable. One of the best Cantillons I’ve ever had [ BA Review @ 7/22/2012 ]

Sparkling orange hazy body and a white rocky head. Balanced aroma of malt and citrus. The taste is heavy acid, light bitter and sweet. Nice to drink.

From tap at Vices & Versa in Montreal. Pour is hazy orange with dense head. Nose is sour and funky. Green apples and citrus. Punchy sourness like all Cantillon beers. A long light bitterness stays on the tongue. Very fruity with unripe green apples. Tart and funk all along. Another great one from Cantillon!

Hipster OG, for sure this one is the OG if Bronsons. Unreal killer sour oak cedar cellar mold basement cheese... You can’t do this in US as it take 4 ever to jones this one. Bucket list to go there and drink from the brewery!

En bouteille au Saint-Bock. D’un doré prèsque translucide, la Iris est surmontée d’une belle mousse d’une durée de vie juste assez longue pour bien se faire apprécier. Le nez est riche, funky et envoutant. On y décèle des notes complexes telles que le cuir. En bouche, c’est sûre et ici aussi funky et complexe. Une surprenante amertûme se fraie une place dans le mix! La bière est bien carbonnatée et le corps est agréable. Finalement, les choses ne vont qu’en s’améliorant alors que la bière se réchauffe un peu... Excellent.

This is a really tasty one. Tart and funky. Barnyard and cheese notes are present as well. Some fruity (acidic) flavor too. Pretty excellent mouthfeel.
