750 ml corked and capped green bottle; bottled on May 5, 2012; almost 9 months old. After almost three and a half years on this site, an unblended lambic finally comes my way. This is the last style on this website that I have yet to rate, all other styles long since found and rated. I’m not a trader, so this shit is hard to come by, especially here in North Idaho. I have Russell Mann at Enoteca to thank for this. I placed my order for this about two years or so ago and it took him awhile to get it, but he followed through. Pours murky orange with a large cream-colored head with good retention. Aroma is wonderful in its funkiness, classic lambic barnyard with lemon, floral, earth, SweeTarts--nice and pungent, although my favorite American sours are a bit more up my alley. Taste is nice, sour and acidic, but not quite as mouth-puckering as La Folie or Avery Odio Equum; finishes dry and a little bitter. To my surprise, it’s not flat. I’ve always heard unblended lambics were lacking in carbonation, but this isn’t; it’s actually moderate. Really good, but I prefer Cantillon’s Gueuze. Definitely a worthwhile beer seeking out, even if it takes awhile to find its way into your hands.

Served to me at delirium cafe, brussels.
A: bottle has appeared to be in a place with lots of soil as I can rub the label and it feels like man hands at the end of a day of landscaping - rough and granular. The beer pours a turbid and hazy honey color. Having been poured with vigor, bubbles appeared at the surface, but transiently. No lacing.
S: tart lemons come thru with some interesting earthy and bell pepper tones. Some cider vinegar and also some anise seed at the tippy tip of the tail.
T: zinga! Sour beer! This is so sour it burns the roof of my mouth, gangster. Flavors of sweaty leather, lemons, potting soil, sheet grass.
M: thin and dry, nearly no carb left here. As mentioned, top of mouth was burning and at the end, my tongue was quite raw.
O: although this may be the sourest beer I’ve had, which is awesome, I don’t think this beer was particularly great for cantillon. Although still very good, and I would drink again and again.

750ml bottle, shared. 2012 cork. Hazy darker orange red color. Good, thin off-white head. Couple loose splotches of lace. Bigger body. Smooth, soft, lightly slick texture. Lighter carbonation, good big tart sour taste, kind of lemony, floral, citrusy tart funky aroma. Very tasty, enjoyable tart sour lambic. I love it. Very nice, tasty.

bottle shared by albatross, thanks bro. pours hazy and bright golden orange with a creamy off-white head, good retention and lacing. barn, grassy, floral, bitter herbs, dusty, white wine vinous character, particularly juicy and fruity - miscellaneous citrus along with its mild sweetness and obvious tartness. nice acidic profile - lactic/citric/acetic. lively carbonation, light body, drying herbal-grassy and slightly astringent finish. awesome!

Ennesimo high score per Cantillon. Assolutamente uno dei lambic più complessi ed eccentrici in circolazione, e anche uno dei più buoni. Acidità spettacolare e ampia, che abbraccia ogni angolo del palato, arricchita dal sapore erbaceo dei luppoli freschi. Il tutto bilanciato da un amaro leggero ma distinto. Merita una standing ovation!

Bottled on 2012. Pale orange colour with an off white head with medium lasting. Aroma has notes of fruits. Flavor has hints of wood, fruits, good sourness with a decent acidic mouthfeel, fruity and flowery hints. The final has a decent sourness with good duration.

75cl bottle, from Geers. Bottled in 2011 says the cork. Pours amber, beige head. Malty nose, no hops. Aroma is acid sourness with a pale ale malt backbone, had no luch in finding the hops. Way to sour for me.

2011 bottle. Pours a beautiful orange unclear beer with a good white head. Smells sour, fruity. Tastes heavy sour and a lots more. Not the usual geuze taste. Thin body, watery texture and an average carbo.

Färsk på bryggeriet. Pigg humle i doften och låg i funk, vilket var lite otippat för mig. Gyllene och klar. Frisk och härlig. Grapefruktjuice. En klantig turist välter ut ett av glasen och skäms en aning.

Pours a hazy golden pinkish brown from the bottle with dissipating bubbly off-white head. Aroma is sour fruits and funky yeast, slight woody ending. Taste is tropical fruit, sour middle, funky grapes, hay and grass, then a lingering sour. Bubbly effervescence covers a little of the sour. Wow, awesome.
