The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

750 ml corked and capped green bottle; bottled on May 5, 2012; almost 9 months old. After almost three and a half years on this site, an unblended lambic finally comes my way. This is the last style on this website that I have yet to rate, all other styles long since found and rated. Iím not a trader, so this shit is hard to come by, especially here in North Idaho. I have Russell Mann at Enoteca to thank for this. I placed my order for this about two years or so ago and it took him awhile to get it, but he followed through. Pours murky orange with a large cream-colored head with good retention. Aroma is wonderful in its funkiness, classic lambic barnyard with lemon, floral, earth, SweeTarts--nice and pungent, although my favorite American sours are a bit more up my alley. Taste is nice, sour and acidic, but not quite as mouth-puckering as La Folie or Avery Odio Equum; finishes dry and a little bitter. To my surprise, itís not flat. Iíve always heard unblended lambics were lacking in carbonation, but this isnít; itís actually moderate. Really good, but I prefer Cantillonís Gueuze. Definitely a worthwhile beer seeking out, even if it takes awhile to find its way into your hands.

bottle kindly shared by Saeglopur at Slovak Austrian RB Tasting, many thanks. orange quite hazy color, small off-white head. smells sour, funk, some fruit notes, cherries, damp grass, light wood. light body, medium carbonation, soft mouthfeel. tastes sour, wood, fruit notes, citrus, sour cherries, apples, some wet damp grass. finishes light sour / wooden and fruity. quite nice and complex, a bit too sour for my liking.

Bottle forom Alus Celle (tnx for keeping us). Pours hazy orange/amber with white head. Aroma is sour, fruity, raw apples, vinegar, some yaest, malty, slight wheat. Taste is sour, woody, oak, settiment of apple juice, medium bitterness in aftertaste,tobacco, balsamico vinegar. Long bitter-sourish finish. Medium to full body. Good beer.

Dark ambar colour, white head. Aroma of vinegar, apricot, honey, citrus and cheese. Taste is medium to heavy sour, slightly sweet, a bit bitter, dry and tart finish; medium body, thin to slick texture, flat to soft carbonation. Very interesting and nice.

Hazy orange beer with nice head on top and smallish lacing. Bitter and sour aroma, green apples. Earthy notes. Taste is really sour. Green zesty apples, lemon. A bit bitter but also quite fresh. Surprisingly full body and high carbonation. This has a lot of edge which is missing in the gueuze. Excellent and challenging, but so rewarding.
