Bottel at Chez Moeder Lambic Saint-Gilles (the original). Pours bright goldish yellow shit a sticky white head, nice lacing. Aroma of grass, citrus, oak and a minor hint of funk; very subtle in the nose. Medium body, but wat a silky and smooth feeling for a Cantillon (less edgy and hard than some of the fresh Cantillon gueuzes). Flavours of grapefruit and wood.

At Dak’s. Pours a hazy golden color with a white head. Funky sour aroma and some vinous notes. Taste is a bit sweet and sour. Really good beer.

Bottle at the DC Lambic & Sour Tasting on April 14, 2012. Served in a Cantillon wine glass.
Pours a clear, sparkling straw color with an average-sized fizzy white head with decent retention and some sparse lacing on the way down.
The aroma has some heavy barnyard and horse blanket notes with some light leather and a nice bit of earth. A good dose of wine and oak are there. Everything is really fresh and pungent, which I quite enjoyed, though others may find it to be a bit young.
The flavor carries on with more wine and funk. Really fantastic balance. There’s moderate acidity and heavy funk over a light body with a nice, dry finish.
Overall, loads of fresh funk and nice acidity with a good helping of wine in the background. One of my favorites of the night. Fantastic.

Bottled. A golden beer with a thin white head. The aroma has notes of lemons, straw, and brettanomyces. The flavor is mellow with light notes of lemons, brettanomyces, ans straw, leading to a slightly tart finish. OK, but a bit boring.

Bottle generously shared by Ryan, the host of the Philly tasting. Clear golden pour with an off white head. Sour aromas. Apricot, citrus, vinous and wood notes with just a hint of that mineral/slate characteristic commonly found in bordeaux wines. Mild sourness, medium in body with fantastic balance..

I decided to let this one age a bit. So I finally tried this rare bottle and imo it has more complexity then the regular geuze (which I tried side by side), not so sour (which I don’t like) but then again a good balance. With this creation Cantillon is heading for less sourness, I wonder if this is good ... . Nevertheless, again a great Cantillon, what else could we expect!

Bottle at Chez Moeder Lambic Fontainas - Thanks to JeanBxl. Clear golden - white head. Nice mellow sourness, smooth, fruity, wooden, grapes, wine notes, mild tartness, light flowery notes. A very nice geuze - but very mild for at Cantillon.

75 cL bottle at Moeder Lambic. Pours cloudy orange with a small white head. Aroma is smooth fruity, barnyard and citrusy. Smooth fruity, mild tart and floral. Smooth, fragile and crisp citric. Mellow fruity finish.
