Please note the age of the sample you are reviewing when entering your rating. While many factors determine whether you have had "Jonge" or "Oude" Lambik, a general rule of thumb is to enter 1 year-old or older lambik under "Cantillon Oude Lambik" and anything less than 6 months-old under "Cantillon Jonge Lambik".

For those between 6 and 12 months of age, you should take in to consideration the character of the lambik. Samples presenting themselves as hazy/cloudy, with some head-formation and residual sugar should be entered as "Jonge Lambik", while those that are drier, higher in clarity and with little/no head formation should be entered as "Oude Lambik".

Draft at the brewery - pours orange/yellow. No carbonation. Smell is lemon zest, earthy, grassy notes. Taste is lemons, tart, acidic.

2015/05/01 - On tap at Moeder Lambic Fontainas in Brussels. Hazy orange straw colour with an off white, soapy head that lingers. Aroma is tart lemon, sour green apple, hay and barnyard. Taste is mildly sweet and moderately sour with tart lemon, hay and very mild barnyard. Mouthfeel is light with very mild carbonation and a tart, drying, dusty finish. Dalla botte, bevuto alla Brasserie. Lambic di 4 mesi. aromi molto intensi, forse ancora un pò spigolosi. Molto presente il legno, il polveroso, la cantina e la rusticità Anche al palato si mantiene molto rustico ed intenso. Fantastico.

Sweet and fruity aroma with butterscotch oak, faint barnyard and refreshing sourness, white grape, cranberry. Slightly hazy gold with no carbonation. Dry and slightly sour white grape, cranberry, oak, with slightly bitter tannins that are woody. Light body, very low, but not non-existent, carbonation.

Golden pale and a tiny bit cloudy color. The smell is a bit like old cheese. No carbonation and a lot of old cheese and a bit of horse stable. The aftertaste is not that overwhelming, still a very good lambic.

Draught at Moeder Lambic. Golden color with inch thick head. A subtle Lambic funk, a bit of residual sugars, hay, wood, apples and lemony, dry finish. Flat. Good and interesting.

Hazy orange with light minimal white head. Aroma is tart green apples, lemon, some earthy barnyard notes in the back. Taste is light sweet, medium tart with green apple skin, lemon and some earthy and dusty notes in the finish together with tart apples. Smooth medium bodied, soft almost flat carbonation.

Less than 1yo sold as young lambiek, from earthenware pitcher@source 02/2015. Flat, dank, mellifluous horsepiss of a semi-mature lemonade, laden with smooth residual sugars, old candied orange and graperuit zest while wandering wood tones lead the palate towards a quenching finish that hints at a second glass. Sweeter than some other jonge lambieks and quite round and harmonious. Pure unpasteurised young&wild goodness in a glass, - bottle this in a bag for everyday culinary use and watch the masses convert?
