UPDATED: JUN 16, 2011 14 June 2011, bottle. bright red, clear, no head. tart cherries, cobwebs, dry wood on the nose. thin body and fizzy. very drying. lots of cherry but not too sour or tart. some woody/cherry pits but nice. great!
(original rating - 7,3,7,3,13 = 3.3) virtually no head whatever. has colour of dark strawberry juice but hazy.
smells tart and maybe faintly of cherries. lots of vinegar and a little cobwebs on the nose.
tastes really tart from beginning to end. slightly fizzy but tartness almost hides it.

UPDATED: DEC 25, 2011 2009 vintage bottle@home: about 1 & ½ year old at time of consumption, fairly fresh for this one, nice full red colour with pink head, smells heavily of cherries, tart & funk, oak, hint of rosé wine, taste is restrained at first but quickly turns very sour, very pronounced tart & funk with a sour ending that really lingers on and turns almost acidic in the end, followed by delicious sour cherries, tiny hint of bitterness, absolutely amazing, spectacular even, wish I could drink this always or at least regularily /// tap@Chez Moeder Lambic: much sweeter, less sour + tart on tap, clearer fruit taste, more accessible, amazing deep red with pink head, could be a perfect everyday drink if it were somewhat available but the same goes for the bottle version /// 2010 bottle sampled twice: still very good but this gains so much with age, the 2010 was merely good while the 2009 was fantastic – rating obviously 2009 version or maybe I have grown numb after trying more sours (rating for 2009 vintage bottle, prefered version)

12.7 oz corked and capped green bottle. 2008 vintage.
It pours a beautiful ruby red with a rosy pink foamy head that fizzes a away leaving wisps of foam atop the ruby beer.
The smell initially hits ou with a giant must. With further examination the funk comes through. This one smells sour as fuck, the smell pierces your nostrils. It is mostly the smell of tart cherry skins, although there is some oak, barnyard, an spiciness as well. The sourness also has a bit of vinegar and lemon.
This one is pretty sour, but also pretty smooth. It is mostly lemony sour with a backing of earthy whole cherries, pits, peels, stems, leaves and all. It has a bit of funk, but it is mostly an acidic sour-bomb.
This one is another solid brew form Cantillon.

Le liquide a une superbe robe rouge. La tête mousseuse désaturée est frétillante. Le nez est agréablement attaqué par une levure sauvage forte et par une armée de griottes lourdement surettes. Le goût est tout aussi incroyablement atteint par des doses massives et expansives de microbes qui provoquent, au contact des cerises, des coups de canon drôlement acides. En bouche, le liquide a un corps léger. Son effervescence bien vivante lui donne une sublime profondeur. Sa texture est légère sans être aqueuse. La finale est explosive mais somme toute abrupte de fruits touchés par une aigreur de qualité. En résumé, tout simplement Cantillon.

Had a few times over the years, time to swing away.. . pours a deep burgundy, light drips of foam .. . tart cherry, wood, balsamic vinegar, raspberry, and sweet wet barrel .. . light puckering effect on the cheeks, quality stuff.. . i enjoyed this beer, like all cantillons, actually, does cantillon make a bad beer?? the answer is noooo .. . he’s better than good. He’s a Crumb.

Tried this along with Hanssens Kriek on the same evening. This was much more sour and much less sour funk aroma. Good but maybe a little bit too much sour for me. Serving: Bottle

12 oz, bottled Jan 12, 2010. Deep clear maroon with a creamy pink head. Nose is black cherry and lemon yoghurt; perfectly tart and funky. Medium light with a zing and a pucker. Taste is sour cherry, lemon zest and light vinegar. Finishes dry with hints of red berries. Very good but maybe too predictable.

37,5cl bottle. Pours a cloudy cherry-like colour with a big pink head. Wonderfully complex aroma: cherries, hay, horseblanket. Lightly sweet, moderately acidic flavor, becomes moderately sour. Acidic dry finish. Nice cherries presence. Medium body, lively carbonation.
