Incredible aroma of cherry and some lovely barnyard notes. Beautiful burgundy, very little activity, tiniest trace of pink head. Majestic cherry flavour, funky, wet blanket comes in as well. Marvelous mouthfeel, dry as a dessert, acidic as can be, tart too. Fantastic! Thank You for sharing mds!

Deleted old rating for this. Bottle brought by Egajdzis to Firemoose’s place. Brewed in 94, bottled in 96. Pours a pure peachy amber, moslty clear, it lost a bit of its pinkish, violet highlights, still has a nice fizzy white head. Well rounded slight aroma of cherries, ripe friuts, barnyard, funky, chlorine, pedio- cherry pie, and lemony citric and lactic acid. Mouthpuckeringly sour with lots of lactic notes, lemon, cherry flavor is almsot lost completely, some bretty characters, finishes very dry and tart. This was awesome stuff. Thanks again Eric!

UPDATED: AUG 29, 2005 1997 edition, sampled 2003: poured a spooky cloudy ruby red with an orange glare to it..the head dissapeared a tad too quickly...the aroma was tart yet with lots of oak notes..some cherry too..and juicy stuff..wow that is some sour stuff..with a strange cherry flavor..sugary cherries..but the tartness is strong in this bad boy..the cherry has a wierd smokiness to it..or something like a hard candy..

UPDATED: MAY 16, 2007 1998 375mL bottle sampled 3/24/04 Kick ass, a 6 year old lambic! Wonderful light pink, like a blush wine yet hazier. As more sediment gets mixed in, it darkens in to a muddy cherry-brown. A good bubbly off-white head perches atop throughout. Immediately upon decorking, it smells of sulfur!!! Interesting. Quickly develops in to some dry band-aid phenols, some light tart cherries and a big yeast kick. Vinegar and fruitiness not dominant in the smell. The cherries allow for huge complexity in the nose, combining fruit esters and acid with the normal funkiness of cantillon products. Amazingly dry, but even more amazing, is the medium-full body. For something so dry, tart and seemingly light, this has a wonderful chewy mouthfeel and big flavors. Yeast is huge, and the cherries are there, but it is a complement to the gueze-like flavors, not the main show. Tart, no artificial/syrupy flavors, and wonderfully complex. Blue cheese on the finish, and a big bite of balsamic vinegar. The flavors just wrap around your palate and stick in a delightfully flavorful way. Cracked, old dry leather comes to mind. I wish I had tried more lambics before sampling this, and I will admit to it being extremely dry, but still, it’s so much better than sugary, syrupy and cloying. This stuff just screams with quality and in all, I didn’t find it too dry. Definitely a big fan of cantillon after trying this. Can’t wait to try the lou pepe kriek.
2003 bottle Wonderful color and head retention, but much less puckering than remembered. I need to have more will-power to hold on to these things longer.
On draught, July 2005 at Redbones. Chalk up one more draught Cantillon experience. And a fantastic one at that. Beautiful color and aroma, even in a bar, with boisterous cherries deliciously confronted with sour bacteria and light wood notes. Must have just been put on because it was tremendously fresh, with no thinning/oxidation whatsoever. Light cherries mingle with dry wood, heavy horseblanket and a distinct and crisp sourness, very refreshing and drinkable. I had 3 glasses it was so good!

Pours out amber-redish with no head. Smells of vineager and fruit. Taste is tart and crisp. Nice sour finish, with notes of wood, cherries, and funk. Great stuff.

This is a super tart lambic, be ready for some intense flavor! The aroma is very musty grasslike and acidic with hints of cherries. The flavors mimic those aspects, for me I love a sour beer and this happens to be a favorite. For anyone who wants to try something new and different try this.

Stone Sour Fest 2009 Pours artificial candy red. Nose is mostly funky cherries. Taste is almost painfully sour. After one sip it looked like someone farted in my mouth. After the initial sourness subsides there is huge tart cherry, some funky horse blanket, touch of vinegar, and a lot of sour.

750-ml bottle Wine Works Springfield, OH - Aroma: almond, tart sourness, cherry, barnyard; Appearance: cloudy, pinkish-red color, no head, no laces; Flavor: fruit acidity, fruity, tart sourness, cherry; Mouthfeel: light bodied, thin texture, little carbonation, dry finish; Overall: complexity of fruit, sourness, and malt with a sour backbone. It was a hard for me to drink the whole bottle due to the intense sourness. Rating is based on my understanding of style and not my likeness of the beer. I would get it again to learn to love it.

Aroma is musty and dry cherries. Pours a beautiful blush red with a huge, fizzy light pink head. Taste is mouth wateringly sour and dry cherries. So sour and good. This is the first Cantillon I’ve reviewed, but as always they rip tongue off with sour and make me want more.

Pours burgundy and hazy into my tulip with a small fluffy pink head. Nose is dark berries, cherry, raspberry and strawberry with lots of funk, mold and sourness. Taste is amazing. Sweet through out with a big mouth puckering sour punch right in the middle that lasts to the end. This is amazingly tart. Mouthfeel is light and clean. This is a such a good beer and at 5% I can drink it all day.
