UPDATED: OCT 15, 2015 Decanter pour on JVR night at Monks care of the legend himself, Tom Peters. Lightly hazy still pour with pinkish orange hue. No head. Aroma has become muted over time with bread, sweat sock, and a honey sweetness. Taste is nice all things considered, cedar and dusty oak, light cognac in finish with a warming quality in the chest. Love the vintage quality of this juice. Glad I was able to try this rare jawn at the place that got me started on lambic. Seems like she’s in her prime now from the ticks?

Pours a Amber gold with no carbonation to be seen(this is intentional). Aroma of stone fruit, caramel, toffee, white wine, oak and cognac. Taste is sour, stone fruit, oak, vanilla, toffee with a wonderful funk that is mind blowing. This is absolutely amazing.

Poured from a bottle at Monks Cafe during a Cantillon event. Hazy orange gold with just a tiny ring. Almost flat but not quite. Deep, complex barrel notes. Well aged but no hint of turning. Very refined. Starts out with an unexpected succulent sweetness. Herbal honey lemon. Bruised peaches. Decants into brighter sour notes. Kaffir limes. Pink peppercorns. Every drop is intensely flavored. Apricot brandy. Toffee apples. Oak. The cognac flavors come out towards the finish. Strong sour perfectly balanced with a subtle sugars.

Bottle at Moeder Lambic. Very still, light copper color. Subtle wood aromas, very mild funk and citrusy sourness. Slight buttery touch marrying the cognac aroma. Amazing balance. Mild mouthfeel with gentle bubbles stroking your tounge. Fine cognac notes with oranges, candied dried fruits and dry wood with a slight peppery ending. Cognac flavors are building up towards the end. Perfectly balanced and a real beautiful treat if you love them cognac barreled lambics.

9/2010- LH12 has been on the top of my list, especially after how pleased I was with 50ºN-4º. I really could not wait to try the ’unblended’ version side by side with 50º, and recently I got the chance... Very slick golden pour with little cloudiness, though when held up to the natural sunlight it was far from translucent. When agitated, sticks to the glass leaving a quickly dissipating oily sheen. The aromas of cognac are present, but hardly overwhelming. Taste is reminiscent of an eau du vie, after a few moments I was hit with that comforting barnyard essence. Minimal carbonation, vs. the moderate effervescence of 50º. That familiar, lingering sourness is present in the finish, though with this one it’s all about subtlety. Oak is present in the taste, however there’s not much of a booziness overload considering such a long exposure in the casks. This was one of the most unique Cantillons I’ve experienced, very balanced and great to enjoy over the period of an afternoon tasting at the Spuyten Dyuvil Lambic Fest. We blended some of the LH12 with several other lambics, and it complimented some of the fruit lambic (pinot d’anuis, malvasia, hommage) quite nicely. Would love to try this again, regretfully that may never happen so I’m glad I had the chance. Upon closer inspection of the empty bottle, this is the first Cantillon I’ve seen with no residual dregs or sediment.
I was lucky to try this a second time, thanks to Joe (ineedabeerhere) at Steve’s house in NJ, all the good things about the first time except I was able to really sit on it and let it open up for quite some time, which really showcased a lot of the exquisite flavors and aromas. Hope to try again someday.

This was a great beer. Very elegant amazing that it has been aged 5 years on cognac barrels. Truly a treat and a nice end to our Belgium trip.

2013 Backlog. Bottle at Zwanze day with Clocks, Puzzl, Max and Vic. Pours a deep murky brown body with thin minor lacing. Aroma is light oak, faint tart fruits, some strange flavor - mushroom? - and light spice. Mouthfeel is medium to thin, seems past its prime, with notes of oak, dusty basement, vague funky dark fruits, light vegetale character and sweet round malt.

75cl bottle at Moeder Lambic Fontainas. It pours a clear amber colour with almost no head to speak, just few large bubbles. Aroma is full on cognac, rich an sweet with vanilla and red grapes. Some light funk and barnyard. Taste is again quite sweet with intense cognac notes, vanilla sweet red wine, some light zestiness in the finish. Wood is there as well as some booze. Medium body with soft carbonation. Overall, very glad I got to try this one but you can certainly find better Cantillons and better cognacs out there.
