UPDATED: OCT 27, 2014 Ok, one of my last final rates before I retire and turn professional with my current beer project. As Cantillon has been such a remarkable and shamefully ignored brand I feel I should include them in my final rates On the eye this beer is extremely pleasant. Extremely red on the side but if you hold it up to the light there is a lovely sunbeam golden red colour which is really stunning. it is very hazy and dark but the colour is still gorgeous. The aroma is raspberries; perfume, white wine grapes and very faint lemons. The taste is plenty of strawberries, a sweet and ripe texture, the acidic levels is quite sharp and dry, very tarty but not too aggressive. The palate is sticky and almost lemon-tart like but very drinkable and an interesting taste of maybe elderflower combined with the raspberries. Really complex and challenging to describe. The sourness sticks to your mouth for quite some considerable time afterwords and this is no complaint. The finish is incredibly long; vinegary and woody. This beer is a bottle from 2008 and has evened out well. A classic lambic. Bought from Utobeer in Borough Market, London.

Bottle at Nuetnigenough in Brussels. Pours a beautiful clear ruby rose color with a whitish-pinkish head. Aroma is deliciously tart, sweet, raspberries, light funk. Similar flavor, good balance of sweet and tart. Definitely one of my favorite offerings from Cantillon.

Bottle at home for my birthday, 2011 label/2013 cork. Slight hazy pink/orange with big off white to pink head that leaves some nice island of bubbles. Lots of visible carbonation too. Musty raspberry, red berries, hay, straw. This has the most barnyard smell I have ever gotten in a beer, pure straw, earth, wood and some diesel fumes. Taste is medium strong sour, not really vinegary but fruity or red wine that is on it’s way too become vinegar. Medium bodied with very crisp feel and full prickly carbonation. Very good.

Poured red, smells like the wonderful winery characteristics . Dark fruit aromas and flavor, with breads yeast popping up. Great wet oak in background. Some barnyard but mostly great crisp tartness.

UPDATED: FEB 3, 2015 2011 bottle. Lively hazy/unclear red with a quickly diminishing pink head. Raspberries can be smelled at a distance. Flavour has lots of raspberries too, but also a whole gosh darn lot of other things going on. Sour cherries, light almonds, barnyard, light leather, oak. Medium body, medium sweet and sour, light dry. Long sour finish with raspberries. Lord have mercy!

2001 vintage bottle. Big thanks to KL. Funky, dusty nose, very earthy, with berries, shoe polish, and a good modicum of horse blanket. Bright clear medium copper color. Very sharp initial, fermenting vegetables, fish flakes, and a persistent green olive strain from mid onwards. Very astringent, tongue-scraping mouthfeel. Varnish and vinegar, sour and powerful aroma and flavors. Takes a few sips for the palate to adjust to this one, but then wow! This vintage has held up so well.

(On tap @ Akkurat, Jan 4 2015) Pours deep reddish pink with a small pale pink head. Nice fresh raspberry forward, lactic, big wet hay for a fruit lambic, slight fresh cheese, bit herbal, nice. Flavour is tart raspberry juice, lactic with tart lemon and even orange peel, and a little dried grass in the bitter, softly acidic finish. The funk is more restrained in the mouth. Light with active carb. Really nice framboise! I almost wonder if this one is even better in bottle with more funk coming through on the palate. Either way it’s a good deal better than Gambrinus, just as one would expect.

Bouteille 750mL. Vintage 2011. Rouge-rose trouble, collet de mousse blanche. Nez tout en subtilité: framboise et vinaigre de vin rouge. Bouche légèrement tartrique, légèrement vinaigrée; framboises et un peu de bois. Un certain côté crémeux en bouche. Bonne.

Odeur de framboise et de lambics. Le goût est légèrement acidulé avec une belle grosse poche de framboises. L’amertume est longue et fruitée. Dans les meilleures bières de Cantillon
