Ok, one of my last final rates before I retire and turn professional with my current beer project. As Cantillon has been such a remarkable and shamefully ignored brand I feel I should include them in my final rates On the eye this beer is extremely pleasant. Extremely red on the side but if you hold it up to the light there is a lovely sunbeam golden red colour which is really stunning. it is very hazy and dark but the colour is still gorgeous. The aroma is strawberries; perfume, white wine grapes and very faint lemons. The taste is plenty of strawberries, a sweet and ripe texture, the acidic levels is quite sharp and dry, very tarty but not too aggressive. The palate is sticky and almost lemon-tart like but very drinkable and an interesting taste of maybe elderflower combined with the strawberries. Really complex and challenging to describe. The sourness sticks to your mouth for quite some considerable time afterwords and this is no complaint. The finish is incredibly long; vinegary and woody. This beer is a bomber from 2008 and has evened out well. A classic lambic. Bought from Utobeer in Borough Market, London.

Bue en bouteille de 75cl au Sherwood Pub (Nicorvo), couleur rose, belle mousse rose effervescence importante. Une bière acide sur la framboise la perfection de la balance entre le fruit et le lambic, une tuerie exceptionnelle !

Traditionally made framboise with fresh red raspberries; intended for export. Has all the barnyard funkiness and complexity of any of Cantillon’s best products; very sec, if not acid, but extremely clever balance between this ’neige’ lambic sourness and a ton of fresh, soft, gentle fruits; very long and dry finish, yet light on the tongue. Clearly one of the great masterpieces in lambic world, though I liked the kriek and the geuze in this series even better.

Bottle at Nüetnigenough, 2010 vintage. Pours hazy red with a pink head. Aroma is sweet and tart raspberries, light funk, oak, vanilla and grain in the background. Taste is tart and refreshing with distinct raspberries, light dry oak notes and barnyard in the background. Light/medium body.

Burg shared this gem with everyone at the Swamp Head Batch 600 release. A huge want of mine. Thanks man! 2010 Sticker on this one pours bright red with a mostly white with a pink hued read on top. Aroma of barnyard funk, yeast, hay, dust, and big juicy raspberries. Flavor follows just the same with lots of dusty barnyard funk and plenty of juicy raspberries. Dry oaky finish. Body is light, pretty dry on the finish, and has medium plus carbonation. Oh yea. This is good. Glad I finally got to try it.

75cl hazy purple red with fluffy dissipating pinkish white head that leaves very light lace. Aroma of funky awesome fruit, lactic, tartness. Taste follows, nice framboise flavor, but not sweet, balanced with tartness wow. Bubbly and refreshing on the tongue, not overly sour. Amazing.

2011 vintage @ Nøgne Ø. Potent acidity - really sour, but yet balanced neatly with lots and lots of fruit. Refreshing and light, but yet complex beyond belief. Fantastic.

Wonderful so fresh aroma ...it seems as they just went picking!!! What was real nice was the yeasty cellar olfactory sense while drinking this! I loved and still love this
