COMMERCIAL DESCRIPTION
The Lou Pepe Gueuze is a blend of three different 2-year-old lambics. The standard Cantillon Gueuze is a blend of 1,2, and 3-year-olds. The inclusion of the younger lambic (which still has some unfermented sugars in it) sparks a refermentation in the bottle that gives Gueuze its famous champagne-like spritziness. The simple idea behind the special Lou Pepe blend is that it should have much more of the taste of old lambic, which is of course much harder, drier, more sour, and more complex than the young stuff. (Though 3-year-olds are generally more complex than 2-year-olds, it's not necessarily so; the 2-year-olds used in this instance have as much character as most 3-year-olds.) This being Gueuze, it has to be spritzy, so the brewery opted for the same method used in conditioning champagne: everyday refined sugar is dissolved in water and added to cause a refermentation. The sugar ferments out completely, so there is no residual sweetness, which Jean-Pierre famously detests.

Bottle pours gorgeous bright gold with white head. Smells lemony and only slightly funky... very fine. Champagne-like mouthfeel carries that tart, refreshing, citric flavor, with its slight tinges of must. Struck me as more refined and less harsh than the standard Cantillon gueuze. In bottle at the 21st Weekend of Spontaneous Fermentation. Pours a light golden colour with a thick white head. Aroma of lemon, horse blanket, white pepper and oak. Similar flavours and nicely tart with a dry finish. Moderate carbonation and a foamy mouth-feel. Great!

UPDATED: MAY 28, 2012 2009 Vintage (meaning the bottle says 2007) @ WoSF 2012 // a new Cantillon in a long time // 75 cl. bottle split with tderoeck & adamjackson (Tim & Adam) // (a) clear golden with a gauze styled head, head gets huge when poured but quickly goes to the smaller side and remains stable // smell is tart, clean, Cantillon barnyard funkiness, lemon zest & serious amount of hay // not as smooth and fluent as Cantillon, this is a bit start stop flavour, remaining rawer nature of about 1 yr old Cantillon, this beer seems to be going a bit against the grain flavour wise, it works but it grinds and grinds, more of a blend of lambics than a gauze if that makes any sense to others, lots of Cantillon funk, heavy hay, rustic barnyard, fields, bitter with some aged hops bitterness in the finish, touch fruity, touch light apples perhaps, small touch of lactic, inkling of floral & touch of champage, it is quite fizzy carbonated // lasting farmyard & touch old hops bitter finish// good but not Cantillon’s best for me personally

’08 vintage bottled in ’11. Cloudy yellow pour with a decent white head. Lemon, grass, funk, and wet hay aromas. Lemon, apricot, tangerine, and brett notes. Dry with mild tartness and good carbonation. A bit acidic with wonderful balance.

Bottle bought @ Ølbutikken. Pours slightly hazy golden with a small creamy white head that dissipates rather quickly without leaving much trace on the glass. Smell is sour with apples, lemon juice, horseblanket, hay, leather, lemon zest, unripe currants, sweat and brett. Taste is very sour with lemon juice, grapefruit juice, hay, leather, green apples, grape zest and gooseberries. Mouthfeel is dry, tart and medium to full bodied. Finish is tart with grapefruit juice, lemon zest and unripe berries.

Hazy golden color, small white head. acidic, sour, apple, tart scent. Oh so sour, oh so nice, very fresh and tasty, mmm, taste. Spritzy mouthfeel, a very low bitterness.
Damnit it’s so damn tasty! And so hard for me to get more of!

2008 model in a 0.75l bottle @ Patricks, Kristiansand. A light blurry golden one with a big lasting and heavy lacing white head. On the aroma this is never to sour or bretty, it’s just subtly delicate with lots of small hints of many things. Hard to tare them apart, but it’s light fruity and leafy, some almost grassy and apricot-hints. Really nice. It’s average to lively carbonated. The flavors are also just so integrated. Melting together a symphony of subtle-sourness and fruity-sweetness. Hard to tell what it tastes, but right now this tastes just excellent fantastic! Yeah, a true winner! One of those you can just drink and drink and drink... Will definitely have this again! 29.03.2012

Bottle (2008) from Vinmonopolet in Valkendorfsgate, Bergen. My second Lou Pepe up for rating, been looking forward to this! :-) Pours a cloudy hay-hued light orange body with a medium, fizzy and short-lived head, which is reduced to a tiny (yet long-lasting) ring of white foam. Aroma is intense, near-pungent bretty stable tones and apple vinegar, with hints of cellar must, bee’s wax, honey and floral sweetness in the back. Very little tartness, compared to the regular Cantillon geuze. Taste is dense tones of stable funkiness, dry near-tart floral hops, citrus peel and bee’s wax...or honey...at least, some dense, semi-sweet carpet of taste forming steadily in the back of each sip. Or, not really sweet but rather like a shadow of former sweetness, as if some ghost of the fermentable sugars was retained in the bottle, post-fermentation. Strange, and rather delightful. Moderate lemon zest in the aftertaste. Full body; more so than most regular geuzes. A complex, intense and great lambic for sure.

This poured a hazy yellow color with a white head. Aroma was of lots of lemon zest, mild funk, some apple vinegar, spice and yeast character. Flavor was very acidic and tart, nice light funky and fruity flavors, and some champagne characteristics too as it is very dry. Very nice overall.
