I think of elderberry as a very European flavor. If you have not experienced a homemade elderberry cordial you are missing out and might not get the full effect of this beer. Really captures the light floral and citrus notes. Very refreshing, covers up some of the funk I expect from Cantillon. I forgot how good this is.

Superb beer. Very well balanced, great fruity nose of elderflower, which also nicely present in the taste. Nice soureness. Great!

Bottle to glass at the brewery. Pours a slightly hazy straw golden color. Has a decent sour nose with big spicy floral notes. Touch of sour in the flavor, but overpowered by the Elderflower spiciness. Very unique. Nothing like any of the other Cantillon offerings, but I like it.

2015/04/19 - On tap at Le Fine Mousse in Paris. Pours a cloudy, dark orange/honey colour with a small white head that quickly disappears. No lacing. Aroma is wood, floral tones, apple, peach, funk, orange and straw. Taste follows nose with wood, straw, funk, and tart apple, orange, citrus and peach. Mouthfeel is thin to medium and silky with mildly biting carbonation and a funky finish that is tart and drying. Really good stuff. ---Rated via Beer Buddy for iPhone

2014 bottle. Pours a cloudy amber color with no head at all. Tart aroma with a strong floral finish. Medium sour taste with a floral mix in the balance. Amazing beer. Light sourness. Love this beer!

Shared bottle. Hazy golden with big white head that leaves a nice ring. Wood, hay, sour grains, dough, light herbal, flowery, grapes, very funky. Taste is light sweet with above medium sourness and a light woody bitter finish. Oh yeah, this is really good. The elderflowers are not too dominant at all and work really well here.

Pours a clear golden yellow with an orange glow. Head was minimal with no retention. Aroma is green apples, funk, lemon. Taste is elderflower, slightly citric, apple and grapes.

Au Saint-Bock... Enfin la chance de goûter à la Mamouche! Au nez c’est fruité, floral, et tout en subtilité. Je ne savais pas à quoi m’attendre des fleurs de sureau et franchement je ne suis pas déçu. C’est prèsque difficile à croire qu’il n’y ait pas plus de bières les utilisant : le résultat est spectaculaire! Au nez les notes légères s’intensifient alors que la bière se réchauffe mais c’est en bouche qu’elles s’épanouissent réellement... C’est un vrai délice. J’ai même envie de chercher pour voir s’il se vend de ces fleurs de sureau pour les utiliser comme épices! Le côté gueuze et acidulé supporte parfaitement les saveurs. Mium!
