I think of elderberry as a very European flavor. If you have not experienced a homemade elderberry cordial you are missing out and might not get the full effect of this beer. Really captures the light floral and citrus notes. Very refreshing, covers up some of the funk I expect from Cantillon. I forgot how good this is.

An amazing dance of the herbal sweet delicacy of the elderberry as it rushes up to meet your nose balanced atop Cantillons acidic, tart, lip puckering, effervescent wheaty and grainy Lambic.

Bottle. Cloudy amber pour with a small foamy ring of head. Aroma are rotten flowers, lemon candy, and some barnyard. Tastes moderate to strong sourness. Dry rotten flowers. Tons of barnyard and cheese. Hints of citrus. Not terrible but not something I’d go back to again.

Bottle: Super hazy, burnt yellow body with a white-ish head that fades quickly to a thin, albeit lasting collar. Aroma has that lovely, signature Cantillon critter funk. Mild lactic acidity, funky barnyard, some sweat sock funk, dry wood, light floral & botanical notes, a small hint of yogurt, & a bit of citrus spritz. Taste has lots of soft woodiness, critter funk with a touch of barnyard & sweaty horse funk. Nice lemon sourness, very mild acidity that snaps but doesn’t burn, citrus, & moderate jock strap funk. A touch of mildly herbal & floral notes coming through the funk every now & then. Dry, woody finish with tons of that lingering funk.

Bottle: The aroma consists of moderate funky, cheese, feet, and lemon. It pours a hazy golden-orange with a one finger white head that quickly fades to a thin film outlined by a slightly thicker ring. The flavor starts with a quick dose of citrus. The finish has light-moderate cork, light sour lemon, lemon peel, floral notes, and a touch of oak. It’s light bodied with light carbonation. Overall, it smells a lot better than it tastes.

Hazy yellow with a low white head. Funky yeast, grass, fruit and sour aromas. The taste was floral, light fruits, funk and lambic sour ending in a big elderflower juice notes. Just great!
