Clear medium orange color with a small to average, frothy, fair lacing, mostly diminishing, white head. Aroma is moderate to light heavy elder flowers, barnyard, funk, wood. Flavor is light heavy sweet and moderate acidic with a long duration, elder flowers, fresh, dry dry, salty notes. Body is medium, texture is watery to oily, carbonation is soft.

75 cL bottle. Pours hazy to murky orange with a fully gone head. Aroma is spiced elderflower. Sweet and citric flavoured. Lingering fruity and mild citric to slight acidic. Dry tarish into the finish. Nice smooth and complex spiced fruity lingering flavoured.

Bottled. An unclear golden beer with an off-white head. The aroma has strong notes of elderflowers as well as some brettanomyces and a bit of wood. The flavor is sweet and just a tad acidic with strong notes of elderflowers as well as a bit of brettanomyces and lacto acid, leading to a dry citrusy and elderflower finish. Bottle 75 cl. Courtesy of yespr. Pours a cloudy golden with a lively off-white head. Tart aroma with distinct elderflower accents and barnyard accents. Medium body, very dry yet surprisingly only discreetly tart. The elderflower really shines which is surprising to me considering the Cantillon base. Dry, barnyardish and slightly tart finish. Fruity and light acidic flavour of lactic acid, elder flowers, brett and wood.

UPDATED: FEB 1, 2011 Bottled, thanks mybestfriend! Cloudy golden, minimal head. Pungent elderflower aroma. The initial floral sweetness is immediately replaced by citric acidity. Tart, spritzy and fresh, strikingly sour. The lemony horseblanket is evident, yet elderflower comes to dominate. One of the most different Cantillons out there.

Bottle. Pours a slightly hazy golden color with a small fast disappearing white head. Has a fruity spicy elderflower aroma with tart funky hints. Sweetish fruity spicy elderflower flavor with some tart hints. Has a dry tart fruity spicy elderflower finish.

Bottle @ Brugmansia/Fonefan US Tasting, April 2010. Pours slight unclear golden with a creamy white head and lacings. Nose is vaguely tart with a clear note of elderflower. Flavor is mouth puckering sour, with some barnyard, funk and a layer of spicy elderflower beneath. Very dry and refreshing. Nice.

Cloudy blond color, small creamy head. The elderflower is evident, it has a fat aroma, blending well with a timid sourness. The mouthfeel is very aggressive, it has an immediate, strong citrusy acidity, with pleasant shades of elderflower. Quite fresh, the cellar and cobwebs character of the Lambic is very subdued. Wonderful.
