Cask at Chez Moeder Lambic Fontainas, Brussels. Orange beer, quite big white head. Sour rubber aroma, fruity, grapefruit, wet grass. Sour vinous flavor, rubber, grapefruit, perfume, some wet grass. Quite balanced, maybe not as sour as many other Cantillon beers.

2yr old, draught at GBBF 2011. It pours flat golden yellow. The nose is sour farmyard, soft fruit, light spice, cider and wood. The taste is hay, grass, wheat, tart lemon, tangy lime, grapefruit, white grape, cheese, wood and mouth-puckering sourness, with a pleasant dry-tart finish. Light body and next to no carbonation. Massively drinkable and thirst-quenching.

Clear orange coloured with a small white head.
Light acidic and fruity aroma of barnyard.
Light acidic flavour of barnyard, berries and oak.
Tart finish of oak.

Bottle from 4th May, 2010. Poured a pale straw colour with a fair beige head. Great lemony sour aroma with some barnyard mustiness and barley. Lingering lemony sour flavour, barnyard funk again and a backbone of barley and honey. Superb!

Transparent Honey Gold, large bubbled white head that stays. Extremely dusty nose, honey and more wood than the jonge, paper and pulpy grapefruit underneath. Really thin grapefruit body, light lemon and white wine, warmth bringing paper and grapefruit, though in contrast. Lower carbonation than I’ve had in most unblended lambic. One of the most dichotomous beers I’ve had.

Lambic cask 18 month at moeder lambic. Orange pour with white head . Body has no carbonation. Light nut, woody, light tartness and almost dusty flavor with hints of fruit and wheat.

Durchgängig präsente Säure, die aber nur wenig vordergründig ist. Mild, etwas nach Milchsäure, später etwas weniger sauer, nur wenig fruchtig, dafür sehr ausgewogen.

UPDATED: DEC 25, 2011 cask@Chez Moeder Lambic: 18 months old, very hazy yellow almost orange with a rather small but surprisingly lasting white head, smells is sour & tart lemon & cider with a hint of wood, taste is a very round sourness with plenty of lemon, as well as some other fruits, touch of malt, hint of some sugar/sweetness as well as dust & cobwebs, medium body & no real carbonation, great stuff as every Cantillon is/// 2 & ½ years old lambic @ brewery: A: hazy, murky orange, typical Cantillon lambic colour, tiny, silly lambic head – S: berries, wild berries, tart lemon, slight horseblanket, aged hops – T: residual sugars (?), aged hops (lots of them), flour, old & musty aftertaste, lots of cork – B; cork dry & little in the way of carb – liked the 18 moth old one @ Chez Moeder Lambic more, this one was a touch more unbalanced, musty & old clothes, odd, nice either way

Light golden colour, no carbonation, no head. Aroma of brett, honey, tartness, stables, some light pepper. Quite floral. Flavour pronounced Cantillon tart, wood, bit of vanilla, quite astringent, minerals, slight white wine (steen/chenin blanc). Lingering sourness and slight astringency in the finish. Very enjoyable.

Nice woody. Nice mellow sourness. Tartness. Fruity notes. Light honey notes. Peppery.
