Served on-tap at Churchkey on Zwanze day 2012.
A - Pours slightly hazy straw yellow with a small half finger tall bubbly white head, dissipating down to nothing at all, leaving no lace at all down the glass.
S - Smell is pretty muted until it fully warms up. Hints of funky cheese, damp oak, basement must, some lemon zest and a dash of vinegar.
T - Starts off with a big sour kick that fades as quickly as it hit you leaving behind hints of lemon zest, musty funk, dry oak and a dash of booze burn. Finish is funky with a moderate amount of dryness, doesn’t stick around too long tho.
M - Light with very light carbonation. Its has a tart feel but it does’t linger for very long, allowing it to be consumed quite easily.
O - I feel like this is exactly what an unblended two year old lambic should taste. Sure its a little rough around the edges, but thats why its perfect for blending and fruit additions. I am glad I got to try this, I look forward to having it again one day, hopefully a little closer to the source.

18 month old I blended Lambic at Cantillon brewery with Kimberly and Taylor. Aroma is young cantillon funk, a little empty compared to the oude Gueuze. Taste is not as dry as most all other cantillon, and a little watery, wheat notes still present. Almost zero acidity. I could pound this all day, easy. Love.

At Cantillon, june 18th. 18 months old. Pours hazy yellow with no head. Aroma is medium barnyard, oak, earthy, citrus and light floral. Taste is medium tart citrus and apples with a rounded smooth barnyard and earthy note, lingering medium tartness. Smooth creamy texture.

Jar @ Cantillon Brewery. 18 months old acording to the server. Pours golden with just a few white bubbles along the glasside. Aroma is sour, bretty, malt, dusty, barnyard, grapes, white wine like. Flavor is sour, grapes, apples, white wine, yeasty, dusty, webs, barnyard. Medium body, flat carbonation, lasting sour wine like finish. Great beer, thats very easy to drink. 290714

18 months old at the source. Flat. Sour and so on. Moelleux. Some wood. Very balanced oude lambic. A light oiliness.

Sample@Quintessence. 3 years old aged. Bière quasi plate offrant un nez fleuri, boisé avec une fine acidité développant des esters alcooliques. Le corps est fort boisé, soyeux voire même un peu mielleux avec une amertume moyenne assez acre à la fin.

Drank at the bruery. 18 month old. Good stuff! Pours almost clean amber with almost no head. Aroma is just clean! Very rural and tart. Moldy oak, leather and weak barnyard. Really natural and nice aroma. Taste is gentle and tart with notes of citrus, oak, weak vinegar and a nice dryness. No carbonation suits this beer. Very romantic and idyllic beer to drink year round.

UPDATED: JUL 26, 2014 18 months old at Cantillon. Dark golden with no head. Deep grains with very bitter lemon peel, follow by a sour slightly acidic fruitiness and a strong bitter woody finish. Didn't expect it to be so bitter, but this is pretty good for a non carbonated beer...

From barrel @ the brewery. Pours slightly hazy light amber with barely any head at all. Clear, vinous aroma with touches of yeast and dust. Moderately dusty onset, leading to intense vinous notes and estery touches. No carbonation. Lingering vinous aftertaste. Good.

On tap as Single Barrel 1-Year Lambic at Moeder Lambic Fontainas. Golden colored with no head. Bit spicy and fruity and extremely sour. Intersting, but I’m not sure I’d order another one.

On tap @ CASK Pub and Kitchen, Pimlico. Golden orange, flat as flat can be. Scent of kumquat and sourdough. Taste is a citrussy sour, not as funky as a gueuze but more brisp and refreshing. Short finish and aftertaste. Worth a try but not earth-shatteringly complex like a blended lambic.
