Fantastic aroma! Strong raspberries, alcohol, and very tart. Flavor is . . . sour! And that’s great. Very acidic, tart, and funky. Light bodied, but fills the mouth with carbonation. Absolutely beautiful pour with pinky tones and creamy lacing on the glass. Lovely tart raspberry-lambic aroma. Taste.. ah... ACETIC TERROR. I with several attempts and cooling the beer could not physically tolerate this beer, and it takes a LOT for me to concede to that since I generally can drink anything. I’m pissed that I cannot enjoy super-lambic beers because there are some lesser ones I have truly loved. Ahh... well for 8 bucks a small bottle, I have learned a cheap lesson in Cantillon. Wild sour aroma with raspberry and wild yeast. Flavor is really sour with raspberry and considerable funk. Palate is somewhat sharp and dry. Dark fruit aroma with yeast to back it it up. Big time tart body with raspberry at the finish. Drying effect at the end. Not your sweet framboise that many people like. Perfect fresh raspberry aromas with light hints of balsa wood and yeast and lovely sour twinges. Dainty, much like its appearance.
Big, sour and tongue-slapping explosion as soon as it gets in the mouth. Great nasal fruitiness with pink grapefruit and raspberries. Nice dryness at the back of the throat, champagne carbonation and a light, floating texture.
The only thing letting this down is that its sour crispness does play with the old stomach a little bit, but then I haven’t eaten in hours so...
