"It has the colour of onion skin", said a voice behind me. It was Raymond Coumans. He was admiring the colour of the raspberry lambic reflecting in the red copper of the buckets used to empty the barrels. At that time (1986), "Raspberry-Lambic" already was synonymous with a sweet, artificially flavoured beer. This is why we decided to distinguish our beer from the other raspberry beers. Raymond proposed to call it a rosť, dedicated not to Bacchus but to Gambrinus.

The process to make this beer is identical to the one to make Kriek. When young, the Rosť de Gambrinus will still present its full fruity taste. Later on, the lambic taste will become dominant at the expense of the fruit taste.

04.01.13. Bottle, 2011. Foam is pink, quite thick, quickly gone. Clear berry red color. Aroma is sweet, some oak, raspberry, very refreshing! Tastes sour (very), with a dash of raspberry. Med. carbonation, smooth mouthfeel though. Aftertaste is sour, a bit bitter, very long and a bit acidic/burning.

Not a fan of this one exactly, but itís certainly refreshing and quenching. Lots of flavor for 5% ABV, thatís for sure.

2012 bottle pours a rusty clear colour with a ring of foam along the edge of the glass. The nose gas candies raspberries almost winegum like. The taste is just as candied but with waves of bretty funk and citric freshness. Mouthfeel is medium with soft bubbles. Finishes super fruity and mineral. Best rdg Iíve had.

Heavy aroma of berries, tart, brettanomyces and acidity.

Turbid/opaque dark orange/red beer with a slight/medium pink head.

Starts medium sweet with berries; ends medium dry and sour with tart, brettanomyces and acidity.

This beer is intense, complex and balanced. The aroma is extremely sour, to the extent that it actually costs a point or two. The taste is more in line with what I like and want from this style. Amazing appearance and the palate is great too.

Very sweet tart raspberry aroma. Cloudy pink color with thin pink head. Great balance of tart rasp/cran sweet/funk. Delicious.

Bottiglia da 375 ml. Color rosa carico con riflessi ambrati, schiuma media di grana molto fine color rosellino. Al naso frutti di bosco vhe lasciano spazio a profumi particolari ( cotechino, rigurgito di neonato e puzza di piedi). Al palato un acido appena accennato con sentori di lampone e finale aspro da frutti di bosco.

375 mL bottle. Originally reviewed. 10/3/2011. I chose a glass that holds well over 375 mL, but this thing overflowed instantly. 1:1 ratio of hazy red body and soft pink head. Head retention is great with decent lacing. Initial acidic aromas with raspberries. Not overwhelming raspberries, but integrated into the acidity. Immediately following is a faint, but recognizable funk. Again, the raspberries do not dominate but seem to blend well. Iím more a fan of funk than tart and I wish the funk came through more. Taste is like the smell; itís tart initially with raspberry flavors but a definite strong lemon flavor. It blends into a funk that, again, is less intense than the tartness, to my slight disappointment. It finishes dry and tart again, a little intensely. High carbonation, medium-light bodied, and refreshingly tart. Dry in the finish, which enhances the lightness, although makes it seem a tad astringent. The raspberries integrated nicely, but brought a strong tartness to the drink. I would have liked more complexity in the funk, but it was too light to identify individual flavors. I am intrigued by this style.

700 ml bottle. Light red coloured with a small white head. Moderate tart aroma of raspberries, green apples, vinegar, lightly sweet, funk and oak. Taste reflects the aroma. Thin body, with a dry texture. And lively carbonation.

From a bottle, at the brewery. Deep, clear, raspberry red. Ring of pink head. Nose has raspberry yoghurt. Raspberry wine vinegar. Some woody, fruit stalk. Taste is dry, and lightly acetic. Dry, cleansing mouthfeel. Strips clean the teeth nicely! Bright, fresh zing of raspberry on the finish.

2015 bottle; Aroma: nice combination of funkiness and sweetness - interesting; Appearance: cherry red pour with pink head that dissipates quickly; Taste: a little more sour than expected, but thatís a good thing; well balanced and pretty complex; Palate: light bodied with tart/sour finish; Overall: delicious. Would get again if available and not prohibitively expensive.
