COMMERCIAL DESCRIPTION
"It has the colour of onion skin", said a voice behind me. It was Raymond Coumans. He was admiring the colour of the raspberry lambic reflecting in the red copper of the buckets used to empty the barrels. At that time (1986), "Raspberry-Lambic" already was synonymous with a sweet, artificially flavoured beer. This is why we decided to distinguish our beer from the other raspberry beers. Raymond proposed to call it a rosé, dedicated not to Bacchus but to Gambrinus.

The process to make this beer is identical to the one to make Kriek. When young, the Rosé de Gambrinus will still present its full fruity taste. Later on, the lambic taste will become dominant at the expense of the fruit taste.

VINTAGE 1979. Vieille bouteille verte et poussiéreuse sans étiquette. Le bouchon est noirci et est en décomposition avancée, sentant la vieille cave sale et humide. Couleur orangée aux reflets cuivrés, faible quantité de mousse blanche tachetée. Arômes dont les fruits se font toujours très expressifs, même après toutes ces années. Fruits style framboise mais aussi rhubarbe et pommes vertes, étant initialement en compétition avec les vapeurs de vieille cave et de terre moisie…Heureusement celles-ci se résument éventuellement. Acidité lactique et acétique toujours présente, dans un bel équilibre, fruits surs et acide se mariant bien aux douces notes de madérisation, rappelant ainsi un vieux vin blanc. Texture huileuse, faible effervescence, tout en subtilité. Bouteille, Kulminator, Janvier 2006.

Oct. 2, 2014. Bottle from beerbistro. Awesome lambic. Beautiful deep pink colour. Not very carbonated. Very small amount of head, tiny bubbles. Very tart: raspberries, sour aroma aromas and flavours. Quite dry, but lovely with a salad.

Rödbrun öl med lättare rosavitt skum. Doft av syrliga hallon. Smaken är fruktig med en gedigen syra som drar i kinderna.

Hazy read with decent head for style. Aroma tart and sweet at the same time, lots of raspberry. Taste tart and fruity, lots of raspberry, very lambic-y. Palate tart and refreshing.

Straight away the familiar Cantillon aroma hits, but with the addition of slight raspberries. This is an older bottle so the sour notes are a lot more dominant. Pours a beautiful rose red with perfect fine carbonation and lingering head. The taste is dominated by a fine sour funk with crisp complexities, finishes very dry and crisp on the palate. Overall this is as one would expect very refreshing. It is on the sour side so might be a little of a shock to Lambic newcomer, but given time this is a very rewarding beer.

750ml bottle served in a Hoegaarden thumbler glass. A: First of all nice bottle art. Traditional green glass which is corked and capped. Pours a beautiful and slightly hazy red color. Forms a big bubbled and fizzy pink head. Low retention and no lacings left. However, a thin layer remains for a long time on the top of the glass S: Absolutely fruity and tart. Strong notes of raspberry. Vinegar. A bit earthy and metallic. Lambic yeasts T: Very fruity as the nose. Strong notes of raspberry. Tart and metallic. Vinegar. Upfront is sour and dry. Strong notes of Lambic yeasts. End is quite tart and dry as well M: Light and watery body. Good carbonation. Tart and fruity aftertaste O: Good drinkability. Traditional Cantillon, which means very fruity beer that is, at the same time, extremely tart and dry. In a nutshell, a Lambic masterpiece :) [ BA Review @ 11/19/2010 ]

Aroma of tart fruits, raspberries, sour cherries, barnyard funk, oak. Flavour is quite sour and tart, raspberry, with a dry and lasting pungent sour finish. This is how I like my fruit Lambic: Not this artificial sweetish junk, but rather the real deal. Cantillon, you rock my beer world.

Sample at Ölrepubliken surölsfestival. Clear light red with white to pink head. Smell is sour unripe fruit and heavy raspberry. Also light funky with basement aromas in smell. Taste is sour with unripe fruit, but not so much raspberry as in the smell. Taste is also funky with leather, wool and stabels. Dry and fizzy.

"i gotta start by saying this was a bit of a letdown after having a $5.99 Monk’s Cafe (which was great) followed by a $21.99 beer that was just pretty good. the look was dark pink woth bubbly pink head. nose had some raspberry but not a lot. sour funkiness as well. the body was a little too bubbly (the type of beer that give you gas by the end of a bottle). the flavor was almost all tart and sour lambic, with barely a hint o fruit. i expected more fruit and more complexity. nice sour finish. that this beer was not spectacular will give me pause next time it’s time to pony up $20 or more for another Cantillon. 1/23/11-had on tap...totaly different beer...more lively, more sour, frutier, more complex, and tastier. 3.2 bottle...4.0 tap. I’ll bump up to a 3.6"

Pour is copper red with a quickly disappearing head. The nose is fresh raspberries with the typical lambic sourness and funkiness. Lots of white grapes. A punchy and dry sourness dominates the taste. Lots of funk with a hint of bitterness. The raspberries give an enjoyable fruity character to this beer. Another great one from Cantillon!

Pours a stunning deep red almost maroon colour. Head is finger width light pink which dissipated almost immediately. Aroma is very strong raspberries with a hint of barnyard funk. Raspberries though, as expected, dominate the aroma. Palate is medium bodied with light carbonation. The taste pretty much mirrors the aroma except with more funk. Raspberries form a lovely backbone of which the funk rides all the way through. Love it.
