"It has the colour of onion skin", said a voice behind me. It was Raymond Coumans. He was admiring the colour of the raspberry lambic reflecting in the red copper of the buckets used to empty the barrels. At that time (1986), "Raspberry-Lambic" already was synonymous with a sweet, artificially flavoured beer. This is why we decided to distinguish our beer from the other raspberry beers. Raymond proposed to call it a rosť, dedicated not to Bacchus but to Gambrinus.

The process to make this beer is identical to the one to make Kriek. When young, the Rosť de Gambrinus will still present its full fruity taste. Later on, the lambic taste will become dominant at the expense of the fruit taste.

Poured from a 75cl bottle. Aged 1.5 years (June 05th, 2011 - Dec 25th, 2012). Pinkish-red hue with minimal white head. Sweet and sour raspberry nose, a little acidic and spicy. Very nice, light with some tartness. Not overpowering or too sugary, very natural tasting. Excellent sample of a lambic.

Bottiglia da 375 ml. Color rosa carico con riflessi ambrati, schiuma media di grana molto fine color rosellino. Al naso frutti di bosco vhe lasciano spazio a profumi particolari ( cotechino, rigurgito di neonato e puzza di piedi). Al palato un acido appena accennato con sentori di lampone e finale aspro da frutti di bosco.

375 mL bottle. Originally reviewed. 10/3/2011. I chose a glass that holds well over 375 mL, but this thing overflowed instantly. 1:1 ratio of hazy red body and soft pink head. Head retention is great with decent lacing. Initial acidic aromas with raspberries. Not overwhelming raspberries, but integrated into the acidity. Immediately following is a faint, but recognizable funk. Again, the raspberries do not dominate but seem to blend well. Iím more a fan of funk than tart and I wish the funk came through more. Taste is like the smell; itís tart initially with raspberry flavors but a definite strong lemon flavor. It blends into a funk that, again, is less intense than the tartness, to my slight disappointment. It finishes dry and tart again, a little intensely. High carbonation, medium-light bodied, and refreshingly tart. Dry in the finish, which enhances the lightness, although makes it seem a tad astringent. The raspberries integrated nicely, but brought a strong tartness to the drink. I would have liked more complexity in the funk, but it was too light to identify individual flavors. I am intrigued by this style.

700 ml bottle. Light red coloured with a small white head. Moderate tart aroma of raspberries, green apples, vinegar, lightly sweet, funk and oak. Taste reflects the aroma. Thin body, with a dry texture. And lively carbonation.

From a bottle, at the brewery. Deep, clear, raspberry red. Ring of pink head. Nose has raspberry yoghurt. Raspberry wine vinegar. Some woody, fruit stalk. Taste is dry, and lightly acetic. Dry, cleansing mouthfeel. Strips clean the teeth nicely! Bright, fresh zing of raspberry on the finish.

2015 bottle; Aroma: nice combination of funkiness and sweetness - interesting; Appearance: cherry red pour with pink head that dissipates quickly; Taste: a little more sour than expected, but thatís a good thing; well balanced and pretty complex; Palate: light bodied with tart/sour finish; Overall: delicious. Would get again if available and not prohibitively expensive.

Intense dark pink color with pinkish head. Aroma has really fresh, bright raspberry and a really light lambic funk. Taste follows with the intense fruit flavor, medium tartness, but overall really balanced. This together with the regular Cantillon kriek are probably the best regular fruit lambics you can get.

Draft sample at In De Wildeman during Carnival Brettanomyces 2016. Amsterdam, The Netherlands. 25.06.2016. Pour it cloudy red color with small red head. Aroma of raspberry, funky, basement. Taste harsh sour raspberry feel, tart a lot, really nice balanced, medium body, oily feel, average carbonation, long finish. Good!

ASPETTO: color amarena quasi limpido, schiuma rosa, abbastanza abbondante, fine, non particolarmente persistente. AROMA: lampone, acido, marcio, floreale, vinoso. GUSTO: stessi sentori che al naso. Carbonizzazione media con bollicine finissime. Buona.

Bottle bought from brewery, 2016 version. Pours purple/red with a very beautiful white/pink head. Aroma is great, full raspberry smell. Taste is a little not what I am used to from Cantillon. Raspberry taste is not as punchy as I expected. Lightly sweet and sour. Maybe not as sour as I wanted too for now. Guess the bottle needs to age more to get the Brett funk in it.
