"It has the colour of onion skin", said a voice behind me. It was Raymond Coumans. He was admiring the colour of the raspberry lambic reflecting in the red copper of the buckets used to empty the barrels. At that time (1986), "Raspberry-Lambic" already was synonymous with a sweet, artificially flavoured beer. This is why we decided to distinguish our beer from the other raspberry beers. Raymond proposed to call it a rosé, dedicated not to Bacchus but to Gambrinus.

The process to make this beer is identical to the one to make Kriek. When young, the Rosé de Gambrinus will still present its full fruity taste. Later on, the lambic taste will become dominant at the expense of the fruit taste.

Poured from a 75cl bottle. Aged 1.5 years (June 05th, 2011 - Dec 25th, 2012). Pinkish-red hue with minimal white head. Sweet and sour raspberry nose, a little acidic and spicy. Very nice, light with some tartness. Not overpowering or too sugary, very natural tasting. Excellent sample of a lambic.

hazy pinkish red; small but quite long-lasting foam; acidic fruity, funky aroma; high sourness, medium- sweetness, slightly bitter; light body, thin but not watery, average+ carbonation, long tart dry finish; Overall: great taste, very intense in every way, refreshing, very well-made

0,375l from bottle at Känguruh pub Vienna. Bottled 03/2015. Red clear color, obvious carbonation, small pink head. Smells of funk, barnyard, light fruit notes. Light body, medium carb, light mouthfeel. Tastes lightly sour, fruits, light raspberry, funk, green apples. Finishes sour with green apples and light raspberry notes. Decent, raspberry notes are quite hidden behind all the sourness. 7, 4, 7,3, 14

Pink with a very frothy head. Raspberries, citrus. Very sour and dry. Average carbonation. Ok but the raspberry aroma is quite faint and overall it is a simple very sour lambic.

Draft at Novare Res for Zwanze day 2015. Beautiful bright red with a purple hue color. Thin lasting pink bubbles on top of the liquid. Aroma is very nice floralness hints right away turning into lasting raspberry with just the slightest lambic yeast underneath.

The funky lambic yeast is held in check by the berries and the floral rose character. I am glad I waited to drink a fresh sample of this lambic. I don’t think I would enjoy an older example. Right now the balance is awesome! Just enough tartness with absolutely no acidic notes. The fruit still comes off as juicy. I love this, I don’t even care how much the draft pour cost. I would drink more of this if I was able to easily get some. Nicely complex and constructed lambic.

Poured from tap at Novare Res for 2015 Zwanze pinkish ruby red with a nice off white head. Aromas of tart raspberry brett and funk. Taste is nice mildly tart well balanced. Wow.

Draught. Pours a pinkish red color with a smallish pink head on there. Nose is sour and fruity, though dry and with a bit of yeasty funk to it. Taste is sour and slightly bitter, with a lot of lighter sour fruits to it. Yum.

From tap. Red color with almost pink head. Funky fruity aroma, barnyard, berries, tart citrusy, wood. Light sweet and heavy acidic taste like aroma. Light to medium thin to oily body with soft carbonation.

Een zeer bijzonder bier van de klassieke brouwerij Cantillon. Je proeft als het ware de oorsprong. Aroma van frambozen, azijn, eikenhout en kurk. Doet denken aan champagne. Smaak is zeer gelaagd: hout, gueuze, frambozen, alcohol. Bijzonder en uniek bier.
