Commercial Description:
"It has the colour of onion skin", said a voice behind me. It was Raymond Coumans. He was admiring the colour of the raspberry lambic reflecting in the red copper of the buckets used to empty the barrels. At that time (1986), "Raspberry-Lambic" already was synonymous with a sweet, artificially flavoured beer. This is why we decided to distinguish our beer from the other raspberry beers. Raymond proposed to call it a rosé, dedicated not to Bacchus but to Gambrinus.

The process to make this beer is identical to the one to make Kriek. When young, the Rosé de Gambrinus will still present its full fruity taste. Later on, the lambic taste will become dominant at the expense of the fruit taste.

12oz. 2003 bottle: This one pours a slightly red tinged amber color. It is hazy. There was a bit of a head on it when it was poured, but it fizzed away quickly. The aroma is sour and tart. A hint of raspberries to it. The taste is pretty much sucker-tart. A touch of raspberries in there. I like the tart ones, but this is a bit much for me.

So, so dry and tart. Radiant golden orange colour with beady, spritzy white head. Tart razz/cherry aroma. Quenching sour flavour. Good, but not my favourtie style.

2002: Faded reddish color, quickly dying foam. I get that sweaty barnyard aroma that’s often referred to, and now I understand it a little better. Fruity berry aromas are very subdued. Great sourness in the flavor, very sour reaspberry flavor. Pretty dry in the finish but somewhat short-lived. Some sweet and sour flavors linger but very quietly. It mentions cherry on the label too but I don’t really get that. I really liked this one except that it did seem a little thin and short-lived.

Pours a soda pop pink with a quickly fizzing champagne-like head. Aroma is intensely sour with a huge amount of raspberries. Body is intensely light and dry. Flavors are all ras and acid with very little in the way of funky barnyard aromas. The finish is bone dry and quick. Nice framboise but I would have liked a little more of the lambic character to shine through.

Bottled(375ml). -My second Cantillon. Nice peachy orange coloured, small white head that went away for two seconds, strong sour nose. Deadly sour raspberries, yeasty and slight fruity taste with dry notes of wood and cork. Dry sour finish with hint of vanilla. Vintage 2007.

Rosehip aroma, unbelievable acidic raspberry flavour. It really sucks your cheeks in and eats your teeth. Something I've got to get used to.

I had this as my christmas morning '02 brew. Pleasantly tart raspberry aroma. Pours with a big, bubbly pinkish head. Peachy pinkish hue. Well, just a subtle glimpse of raspberry, very sour, nicely effervescent, the sourness is almost inviting. I like this lambic, as well as the entire Cantillon line.

Color is somewhere between burgundy and raspberry. Aroma of musk, yeast, raspberry, and kool-aid. Tart with restrained sweetness. Cranberry and grapefruit sourness. Mouth-puckering palate.
