COMMERCIAL DESCRIPTION
"It has the colour of onion skin", said a voice behind me. It was Raymond Coumans. He was admiring the colour of the raspberry lambic reflecting in the red copper of the buckets used to empty the barrels. At that time (1986), "Raspberry-Lambic" already was synonymous with a sweet, artificially flavoured beer. This is why we decided to distinguish our beer from the other raspberry beers. Raymond proposed to call it a rosé, dedicated not to Bacchus but to Gambrinus.

The process to make this beer is identical to the one to make Kriek. When young, the Rosé de Gambrinus will still present its full fruity taste. Later on, the lambic taste will become dominant at the expense of the fruit taste.

Bottle 375ml. Aged 18 months piror to tasting. Poured hazy bloody pink with an averaged sized, pink, frothy head which was mostly diminishing. Aroma was of acidic fruit with strong notes of musty wild yeast, sea water, cranberry juice, sour raspberries and fresh lemon juice. A very strong acidity in the flavor with sour yeasty notes, tart acidic fruit, sour cherries, fresh lemon juice, unripe cranberries, salty/brine-like notes and light notes of white-whine vinegar. Medium bodied with medium carbonation, a dry/tart mouthfeel, slightly syrupy texture and a long length finish.

Bottle. Pinky in colour, small pink head. Aroma of raspberries, some vanilla and low funkiness. In taste medium sour, tart raspberries, leather, wood. Funky in the finish, dry. Very good.

Aroma: Medium-high barnyard, Medium-high sourness, Medium raspberries Appearance: Clear, Red body, Medium pink head, good retention. Flavour: Medium high sourness that diminishes quickly., Light raspberry. LIght goaty. Medium sherbet. Dry finish with lingering sour raspberries. Mouthfeel: Light body, Medium-high carbonation. Overall: Good to style, but not a beer I can see myself drinking again. 375 ml bottle, poured. Thanks Andre! 17F. Fruit Lambic

UPDATED: JUL 18, 2015 Bottle thanks to Tectactoe. March 2015 bottle. Aroma is funky raspberry yogurt, vanilla, and hay. Tastes dry and moderately funky. Tart raspberry, vanilla, leather, cotton, moderate acidity. Really good.

Pours bright Marachino cherry red with a solid pink head. Settles to rim bubbles and leaves no lace. Clear broth. Smells like soured children’s aspirin--a bit of the fake orange for the nose. Attractive, though, and unusual. Sour start and very dry. There’s a bit of bitter cherry in the mouth. The finish brings back the sour and dryness. I also note some floral notes. Thin and watery for the body. Definitely something to try for a complete change of pace.

Pours bright red with small pink fully diminishing head. Aroma is medium malty with notes of straw and hay. Lovely raspberry aroma. Medium yeast aroma with notes of dough. Very dry taste with raspberries, highly sour and funky. Longish aftertaste, refreshing. Body is light, palate is watery, lively carbonation with small bubbles. Great.

Cantillon, quand tu me tiens... Bière dégustée avec Dimitri à la maison. Rouge comme un jus de framboises frais, mousseuse, translucide, éclatante; comme cette bière semble fraîche et rafraîchissante! Nez de framboises, de fleur d’hibiscus sur fond de barrique de chêne, de fraises des champs. Que de la fraîcheur. Acidulée sans toutefois être très acide (s’agit il d’un pléonasme?) la bière est mi-sèche. Le sucre présent n’est pas un sucre résiduel attribuable au malt mais le sucre que l’on retrouve dans une jeune framboise surette des champs sur fond de lambic. Mon Dieu, Vous êtes Grand!

@Cantillon from the barrel at room temperature. Slightly hazy red colour with a nice pink head. Sour, berries, basement and wood in the aroma. Soft carbonation and light to medium body. Taste is tart with fruity notes and a wine character. Overall, a very good and balanced lambic.

Draught. Clear red with slightly pink head. Aroma is sweet raspberries, slight funk, raspberry juice, raspberry seeds and raspberry preserves. Taste is sour/acidic , raspberries, funk, raspberry seeds and acidic raspberry preserves. Medium mouthfeel and medium-strong carbonation.
