COMMERCIAL DESCRIPTION
Editor’s Note: This is a special version of Saint Lamvinus that was bottled unblended (and uncarbonated) for Akkurat in Stockholm, Sweden (listed on the menu as 2004 Saint Lamvinus Still). Only 200 bottles were made. There were no distinguishing marks on them. This is NOT available in the United States nor in Belgium, unless from Jean Van Roy himself. Some bottles are available in Denmark from certain Ratebeerians, otherwise only from Akkurat. Unless you specifically were told that you had unblended Lamvinus, and it was dead flat, you had regular Lamvinus.

UPDATED: MAR 19, 2005 Pours unclear deep red with no head. Vinous aroma of berries and wood, rather dry. Very dry and woody in the flavor with notes of grapes and some grapefruit. Interesting and actually quite different from the ordinary Saint Lamvinus! Thanks a bunch Jacob for bringing it to Denmark!

75cl bottle shared at Akkurat. Poured in a gueuze glass. Vintage: 2004 - label reads "STILLA" which means it is the real deal. Hazy, light purplish ruby. Thin, off-white head forms around the edge of the glass on a soft pour. Absolutely beautiful nose coming of this beer. Medium ripe grapes, touch of funk, cherry, and dark berries. Slight oak and yeast. Taste is very complex and layered. Dry grape skin, earthy funk, and flat floral notes followed by touch of berry fruit sweetness, cherry tartness, and soft oak. Finishes with a subtle acidity that leaves your palate wanting to go back for more. My glass continued to empty too quickly and before we knew it, the bottle was gone! After a long afternoon/evening of drinking some top-notch beers at Akkurat, this was the winner for me. It was a wild card for sure, but the unblended (i.e. stillness) of this beer is so wonderfully executed I could barely find a flaw. Rounded, delicate, and very, very tasty!

Pours an opaque grapefruit red with a tight white bubbly head that dissipates immediately. The nose is brialliant, light cantillon funk adding notes of rubber band, the fruits are delightful, red grap skins lightly tart, grapefruit, and citrus. The taste is deep and balanced, citrusy, tart red grapes, light rubbery funk with a touch of acetic acid and some heat in the finish. Medium body, a bit syrupy but soft on the palate, light carbonation and semi dry finish. Finish falls off slightly, no carbonation, well integrated and complex.

Bottle, in courtesy of Reza @Tre Små Rum, Göteborg. Thanks! Clear ruby. No head, no carbonation. Big and sour red wine-scented aroma. Lots of citrus fruits too, and some quite horsey notes. Strong sour-fruity flavor. Notes of wood and citrus zest. Surprisingly easy on the palate. Tart, light astringent fruit ending. A very special one. Exciting!

Bottle @ Akkurat, Stockholm. Pours a clear reddish color with a small off-white head. Has a fruity almondy sour tart aroma. Fruity sour tart flat grape flavor. Has a fruity sour tart grape finish.

Pours still deep red with an almost purple hue. Big sour aromas. Seed characteristics, acidic vinegary nots of cherries and other berries. A high acidity, sourish taste as well. The barnyard notes are definitely there together with a cherry, grapeish note that I can’t get my head around. This is a super tasty beer that comes of mean and aggressive - Just like I want my sours.

[9/29/11] Mahleket Hanikot Shotrim ’11 tour. Bottle shared by Hildigöltur at Plan B in Copenhagen. Huge thanks for all the beers Jacob! 2004 bottle. Hazy red-amber color with a bit of pinkish foam. Lovely aroma of barnyard and some grapes notes. Sour funky flavor with vinegar, some lemons and some grape fruity notes. Wonderful.

"Merlot Still" bottle. Tea-Hinted Opaque Ruby, almost kriek colored. Small bubbled white head gone in 1-1.5 seconds. Grape skin, light rubber and some white pepper, then earthy wood. Flavor is moderately oxidized, bit of fruit pit and citrus, earth and more grapeskin following throughout, the grape dominating in the murky profile. Decent, but only shades of my memory of St. Lamvinus.

Cantillon saint lamvinus marked as ’stilla’ on the label. 750ml bittle. 2004 vintage purchased and consumed at akkurat, Stockholm, Sweden... Pours a rather turbid orange raspberry tint, allowing a touch a light to penetrate through. It is topped with a thin to medium vivid white creamy film which slowly works it’s way towards the glass edge... Aroma is semi-soft and subtle at first with notes of red berry- like fruit while the classic cantillon house funk permeates throughout. Interspersed with berry seeds and red grapes, the aroma accentuates its fruity nature as contributed to and by the wine barrel... Flavors offer up much of the same but its assertive yet gentle acidic nature seems to have a firm grasp here. While not overpowering by any means, it symbiotically socializes well with the grape and redfruitiness that can be found throughout. House basement cantillon goodness surface along with the aforementioned qualities giving it a cheesey horseblanketlike presence, again providing and adding to the balance rather than detracting from. With the ’stilla’ moniker, carbonation was not expected but the acidity and aging seems to have given it a brevity of perkiness that can almost be perceived to as a faint carbonation. This one is drinking well and was quite delectable in its own right. If these new yorkers don’t get here soon, this one will be all mine. 8/4/9/4/17

Flaska på Akkurat 2011: En av enbart 200 flaskor från 2004. Tydlig rödfärg, stor ekdoft men ändå ganska mild och mjuk. Fantastisk syrlighet och sötma. En mycket mjuk eftersmak. God som tusan.

Bottle at Akkurat in May 2011. Hazy pinkish with no head. A very elegant and vinous beer. Also very tart. Nice aroma and taste of berries, oak and vinegar. Dry and with a sour finish. Excellent mouth feel despite no carbonation. Superb beer!
