Very tannic, the tartness is minimal. Strong grapeskin character. Beautiful purple color. A bit oaky. Mild sweetness. Very tasty, a great example of how Cantillon can capture just a wide variety of fruits and make each lambic unique.

La birra più simile al vino che abbia mai bevuto, ma con un’acidità tutta sua propria delle fermentazioni spontanee marchiate Cantillon. Già all’aroma si percepiscono le note intense di vino rosso, mosto e frutta rossa. Tutto confermato e anzi ampliato nel gusto, dove frutta rossa, note vinose e di legno maturo si intrecciano in un’incantesimo che ammalia i sensi. Saint Lamvinus è l’unico santo che potrei mai pensare di adorare.

Red pour, good sized pinkish head. Lots of funk in the aroma, red wine, vinegar, earthy. Superlative taste...... Red wine, tart cherry, funk, merlot, quite sour, oak, red grape. Long finish. Im not doing this one justice.

0.75l bottle from trade with Countbeer, many thanks my friend. Hazy dark red color with thick pink head. Tart aroma of red wine, cherries, barnyard, earthy notes, oak. Dry tart taste witch red grape, cherries, tart apples, red wine, oak, wild yeast. Dry, vinous finish.

Taken pretty much word for word with no editing, because this was 8 months ago when I was in the midst of dissertation-writing and am in no position to argue with anything I wrote down then. Anyway ...
Aroma: Beautiful -- earthy ripe fruit; diaper; a lot of earth / funk in this, which I like. Appearance: Light ruby red, pinkish ring of bubbles, hazy. Taste: A lot more earty, fruit/tart - wine, grapes. Palate: long fruity, tart finish. Slick, mouth-coating texture. Overall: Burping up diaper, fruit, and (on the second glass at least) cheese. Yum. Great.

Magenta body, light purple, fizzy head.
Fresh baby diaper. Wild. Oak. Explosive flavor, striking tannins but still smooth. Happy New Year.

Bottle shared by drowland, pours a clear dark purple with a pink head and some lacing, the aroma has tons of fruit, grapes, cherries, god knows what else is in her, amazing, the flavor has a tart front end with a ton of fruit through out the entire drink, a little bit of barnyard mixed in too, it’s sour, but not over the top sour, nice smooth mouthfeel, loved it.

Rating #1500, thanks Alen! 750 ml corked green bottle, bottled on 10/18/11, best before October 2014. Aroma is a little skunky, some rubber (thanks Cantillon for your use of green glass), barnyard funk, sour fruit. Pours a gorgeous ruby red with a one finger white-pink head; has only decent retention. Taste is perfect sour Cantillon (10/10 on a sour scale, this is serious mouth-puckering shit). Delicious!

750 ml bottle- Pours a beautiful hazy reddish burgundy with a nice off white head that reduces to a collar and a thin blanket. Aroma is a little skunk, rubber (stupid green bottles!), funk, cherries. The taste is much better than the aroma, funky, tart, cherries (or is it merlot grapes?), the finish that skunk kind of tries to ruin the party. Cantillon never disappoints, not yet anyways!
