Draft at Brouwerís for Sour Fest last year. Just found these notes when looking through my research notebook. Taken pretty much word for word with no editing, because this was 8 months ago when I was in the midst of dissertation-writing and am in no position to argue with anything I wrote down then. Anyway ...

Aroma: Beautiful -- earthy ripe fruit; diaper; a lot of earth / funk in this, which I like. Appearance: Light ruby red, pinkish ring of bubbles, hazy. Taste: A lot more earty, fruit/tart - wine, grapes. Palate: long fruity, tart finish. Slick, mouth-coating texture. Overall: Burping up diaper, fruit, and (on the second glass at least) cheese. Yum. Great.

Bottle. Magenta body, light purple, fizzy head. Fresh baby diaper. Wild. Oak. Explosive flavor, striking tannins but still smooth. Happy New Year.

Bottle shared by drowland, pours a clear dark purple with a pink head and some lacing, the aroma has tons of fruit, grapes, cherries, god knows what else is in her, amazing, the flavor has a tart front end with a ton of fruit through out the entire drink, a little bit of barnyard mixed in too, itís sour, but not over the top sour, nice smooth mouthfeel, loved it.

Rating #1500, thanks Alen! 750 ml corked green bottle, bottled on 10/18/11, best before October 2014. Aroma is a little skunky, some rubber (thanks Cantillon for your use of green glass), barnyard funk, sour fruit. Pours a gorgeous ruby red with a one finger white-pink head; has only decent retention. Taste is perfect sour Cantillon (10/10 on a sour scale, this is serious mouth-puckering shit). Delicious!

750 ml bottle- Pours a beautiful hazy reddish burgundy with a nice off white head that reduces to a collar and a thin blanket. Aroma is a little skunk, rubber (stupid green bottles!), funk, cherries. The taste is much better than the aroma, funky, tart, cherries (or is it merlot grapes?), the finish that skunk kind of tries to ruin the party. Cantillon never disappoints, not yet anyways!

Bottle - 750ml (2007). Hazy pink/peach bosy with a thin white foamy head. Fresh hoppy/herbal aroma with fruity (grapes, cherries), malty, and woody hints. Its sharp, robust, well balanced hoppy taste carries fruity (grapes, citrus), malty, and herbal notes. Ends with a long, strong, sour finish. Perfect example of lambic.

750ml Bottle - Red/purple in colour. Grapes and cherries in the aroma. Grapes, blackcurrants and raspberries feature in the fruity, tart and sour taste. This vintage is from around 2005 and has held up well.

Bottled 2010 A: pours a beautiful deep rose read with a finger of transient pink foam and brilliant clarity. No lace. Beautiful beer. Normally, some of the characteristics here would take away, but this appearance is simply stunning. Great looking beer. S: Mmmmm. Spicy blend of yeast, dry sour, farm funk (the most Iíve smelled in a cantillon), lots of lacto. Nice. T: Dry, puckering, tart and fruity. The fruit tone is really surprising provided the time in bottle. Plenty of signature Cantillon sour puckering flavors. Hints of white vinegar. Really nice. M: Thin, moderately low carbonation allows for the tannic dryness in the beer to shine. Make me water and want more. O: I really, really enjoyed this beer, but I think I might prefer some of the others from the crew there in Brussels to this one. Serving type: bottle 11-19-2011

On tap at CBC, Clapham. Pours a cherry colour with a pinkish head. Aroma is lovely - wine, cherry, custard. a little raspberry. Light body, full carbonation. Dry and pleasantly sour with grapes, a little woodiness, lemon, strawberry... and more besides. Lovely. ---Rated via Beer Buddy for iPhone
