Bottle conditioned. Deep cherry red, very shortlived pale purple head and very low condition. I swear that when I pulled the cork there was no pop, but a sucking of air into the bottle. Excellent big fruity bitter cherry, blackcurrant and vanilla notes in the nose, with some hints of rotten tree stump towards the bottom of the bottle. Smooth and full bodied in the mouth but with a fruity dry tartness and a suggestion of grape skins, some red wine notes apparent after a while. Some funky lambic flavours noticable in the finish, slightly oily and fruity with a farewell tartness as it leaves the mouth.

2002 bottled. Reddish pink color, firm head. Typical Cantillon aroma. Oak, lemon and sone honey. A hint of grapes, but certainly not very apparent. The grapes are really there in the flavor. Rubber, oak, and grapefruit. Honey, some yoghurt. A gentle sourness in a fine lambic with a vinous character. Not the best Cantillon there is, but still a great beer.

Aroma: tartness, slight medicine scent. Smelled very juicy, of roses and dafodils, slightly metallic and of vinegar.
Appearance: reddish-purple (similar to red grapes), slight lacing, small head.
Flavor: Sweet vinegar, tart, sour candies. Flavors of fruit and flowers throughout, including rose hips, lemon rind, corn, and mint. All flavors were quite subtle.
Palate: Smooth tartness and bubbly with a tart floral lingering aftertaste.

(Bottle) Pours a pinkish-red punch-like color with a white head. The aroma dances up your nasal passages with a beutiful bouquet of grapes. Has a tart flavor and hints of come woodiness. I would like to try a bottle that has been aged a little bit longer (3-5 years)

Heavens to betsy, I love Cantillon. The aroma is beautiful--as fine as any that Cantillon makes--with a beauful grape resonance and some woodiness to mute out the lambic qualities. The color is absolutely perfect--a Kool-Aid red with many hues blending together. The flavor is sour with lovely mild fruity flavors, though it doesn't hit as pronounced as some of their others (the gueze from a keg beats this)... Still, wonderful beer. Give me a case, please!

UPDATED: JAN 26, 2007 White head on a dark cherry body, "tart" aroma of wood and fruit, very robust plum and lavender flavor, overall has a high acidic feel with flavors buried underneath, but it is insanely enjoyable, with some cherries and strawberries appearing over time.

Nice tart flavor, sweet finish. Aroma is sweet, fruity. Lovely palate - smooth, soft, flowery feel, if there is such a thing.

Vintage 1999.
Pours a frothy and lively pink head on a deep red body. Sweet and sour aroma with blackcurrant notes. Flavor is tart fruity and woody (very Cantillon-like) with a dry finish. Quite fresh and complex and better than most other Cantillon lambics! Thanks to Jens (Ungstrup) for sharing this beer with me!

UPDATED: APR 3, 2005 [Vintage 1999] The aroma is sweet and sour with notes of cherries and grapes. The color is an unclear deep red and it has a fine pink head though disappearing. The flavor is sour with strong grape notes and acid from the wild fermentation. It ends on a woody dryness. This beer has a lovely flavor.

Definitely let this one warm up before trying it. The aroma while fairly cool gave me a distinct canned tuna and green olive vibe. It mellowed to a softer yet still sour aroma with distinct cedar and oak notes. Rusty tin and cherry flavor, dry and mossy finish.
