UPDATED: JUN 24, 2007 [In the summerhouse of Fjerritslev after 180 km on bike in 2005.] This brew was my very fist Cantillon and maybe it was also one of the first I could not drink totally finish. Now times has changed and I’m sure that it will not happen today. But it was so sour that my nose almost turned 100 around its own bone and with the hole family looking at me I had to swallow it, not to loose face. After two hours I only poured a little in the sink....and it was my most expensive beer until that. I have highrated it a little bit, because now Cantillon is one of my favorites. If I should drink it again it will be more than 4.0!!!

(Bottle, looks about 75 cl, thanks omhper!) Bottled 2003. Shady redish brown color, small disapearing pink head. Lambic and gueuze acidic spontaneous fermented scent. Stables and grass. Grassy sour spritzy taste with a metallic aftertaste. Spritzy mouthfeel. Some bitter astringent mouth puckering feel, might be from the wine? Also some dry feeling, oak?

2006 (Bottled 25 OCT 06) = Hazy grape color, smallish apricot to pink head. Sloe (blackthorn?), mild acidic, sweetened unripe (green) red currants scent. Sour, red berries, grape peel taste. Smooth mouthfeel, no bitterness. acidic and red berries aftertaste, also not ripe red currants.

2007 (Bottled 22 NOV 07) = Hazy grape red color, smallish pink head. Sour, acidic, automn forrest, fruity, red currant scent. acidic to sour, red currants when not quite ripe (green), lemon, some blueberry taste. Mix of smooth and spritzy mouthfeel. No bitternes I can sense. Acidic aftertaste. Very nice.

Hazy inside of blueberry color, pink head. Grape, oak, sour scent. Sour, metallic, grape taste. Very sour aftertaste, and gut wrenching. Medium mouthfeel, very low bitterness.

Murky red color, pink head. Acidic, lactic, sour, funky, some berry scent. Acidic, sour, green apples, fruity, tart, biting on lemon taste. Mouthpuckering sour, dry mouthfeel, very low bitterness. Sour gut feeling.

UPDATED: APR 7, 2008 Oh Yes. Pours Cabernet grapeskin red with deep pink accents. Typical small but long-lived Cantillon head(for an aged bottle), pink and purple with white ringlets of bubbles. Mostly translucent, slightly oily in appearance. Cantillon house aroma that seems more full bodied than usual. Strong musty grape aroma with a tannic flash and a bit of cedar. Reminds me of the Italian variety of goat cheese somewhat. The sourness penetrates my senses, and I have yet to taste this. Upon first sip my mouth comes instantly alive, like drinking lambic for the first time, all over again. Taste is much sweeter than any Cantillon I’ve tried, excluding Rose de Gambrinus, but I believe it’s even a touch sweeter than even that beer. Flavor is magnificent, so well rounded and so delectable. The tartness melds perfectly with the sweetness. Cherries explode! Raspberries pummel! Grape skins entwine my taste buds and oaky tannins tie it all together. The tannic-style acidity lingers, sinking into my cheeks, the sides of my tongue go numb. Fire slowly cascades down the back of my throat. At first the finish seems very full bodied, then suddenly it becomes light and quenching. Simply marvelous.

Bottle. 2005 vintage, sampled on new-years 2006-7. So this bottle is almost at two years of age and I fear that the grape character might have diminished somewhat. Nonetheless, amazing lambic and more grape character than the Vigneronne.

Bottle, ruby pink with a huge foamy pinkish head. A subtle red wine aroma with a touch of tamarillo. Sour and tart with a long tart finish. Definitie red wine flavours with some tannin. Brilliant.

Of all the beers on RateBeer, this St. Lamvinus is arguably the closest to wine. And it tastes like it with a hint of grapiness imparted from the Burgundy barrels. Very tart, though less so than Cantillon’s other lambics. Pink in color. Complex.

Cork says 2004. Pours ruby red into a tumbler. Pink micro head quickly recedes to skim surface. Red grape and funk aromas. Tart sulphur up front and crisp with a lasting sour burgundy finish.
