Bottle (Cantillon, Brussels)
Rich red, small pink head. Musty aroma, and a crotchy acrid sourness. Sticky bitter sour mouthtaste initially, but that transitions to a lighter elderflower and fruity body. Long dry bitter finish. A tad winey, and also bitter for me, and didn’t have the level of mellowness I expected from the oak barrel aging.

Bottle. Poured hazy purple color with minimal fizzy white head that diminished slowly with fair lacing. Good tart grape & yeasty aroma. Medium body with tingly texture and lively carbonation. Moderate to heavy sour fruity flavor with a solid tart fruit and small alcohol bite finish of moderate to long duration. This is a standout lambic.

750 ml capped and corked bottle poured a clear reddish purple with a small ring of pinkish foam. Aromas of red grapes, barnyard funk, light leather and a hint of vinegar. Palate was light bodied and crisp with a dry tart finish. Flavors of red grapes, funkiness, leather and light vinegar with a crisp dry lingering tart funky finish.

Bottle. Frothy white fair mostly deminishing head. Red colour. Exstremely sour aroma and flavor. Fruity (grape) notes. Not sweet. Average finish. Oily palate. Not very good.

Keg at La Capsule, Lille, France. Clouded red to brown with white head. There is a fruity sweetness which is cut through by a tannin tartness. Woody notes, sharp and tangy, rich on the palate. Very pleasant.

(brewtopia04, bottle) Opaque fuschia without head. Aroma is vinous, old sweaty socks, barnyard. Taste is the same as aroma. Medium acidity, i.e., not as much as most Cantillon, medium body.

Lubiere (12802) - Ottawa, Ontario, CANADA - DEC 11, 2005
Rosé lambic with a light cherry and lactic acid aroma. Dry cherries in mouth with strong sour notes, very puckering and definitely classic. Rich and complex, with cheese-like qualities. Medium bodied. Sampled at Quintessence Cantillon 2005.

Red with a pink head. Aroma full of berries and some champagne. Very dry, slightly bitter and a hint of oak.

(Bottle) Pours a pinkish-red punch-like color with a white head. The aroma dances up your nasal passages with a beutiful bouquet of grapes. Has a tart flavor and hints of come woodiness. I would like to try a bottle that has been aged a little bit longer (3-5 years)

bierkoning (12280) - La Tropica, NETHERLANDS - APR 13, 2004
UPDATED: JUL 18, 2014 2002 bottled. Reddish pink color, firm head. Typical Cantillon aroma. Oak, lemon and sone honey. A hint of grapes, but certainly not very apparent. The grapes are really there in the flavor. Rubber, oak, and grapefruit. Honey, some yoghurt. A gentle sourness in a fine lambic with a vinous character. Not the best Cantillon there is, but still a great beer. nov 2012 bottle, tasted July 2014. Red color. Grapes, grape peels, citrus and oak on the aroma. Well rounded sour flavor with grapes, remaining tannines, oak, grapefruit. The complexity is there, the fruit is there. Great beer.
