Sour lemons and vinegar with hay and some vineous notes. The taste is a mouthpuckering sour vinegar and limes at first. As you keep drinking, you get hints of some dry champagne. This golden lambic ale pours with an off-white head that dissipates quickly. Since the bottle we were served was younger than the commercial version, the flavor was sweeter than with other bottles I have had, and there was far less carbonation. Still, it was more tart and better balance than most other lambics.
