COMMERCIAL DESCRIPTION
How will a high fermentation beer ferment in the environment of a Lambic brewery where wild yeasts pervail? This old style white beer give you the answer. Ingredients: malt(60%), wheat(35%), oats(5%), hop (exact wording on bottle)

UPDATED: JUL 29, 2012 75 cl. bottle split by two@WoSF 2011: hazy yellow with a white head, smells is sour dough hop & yeast, taste is wheat, wild yeast, hop, lots of funk, plenty of horseblanket, barnyard, and lemon medium body & carbonation, tastes exactly like what it is, a wild fermented witbeer, which is amazing & overall a great beer, lots of fun // tried it again at WoSF 2012 // this is evolving quite wonderfully, difference between Iris with which it shared some similarities last year is way bigger now // the bacteria have even most of the yeast away now & it is much clearer, sharper, interesting citrus, floral, barnyard unified flavour now, great stuff // curious as to how this one will evolve in the future // still like this one a lot more than most people seem to

Bottle at the Monk’s Cantillon event. Pours cloudy light gold, medium white lacing, and not much head. Aromas of coriander, spicy yeast, wheat, brett, lemons. Taste is insanely buttered the fuck out...almost like dipping some lobster in some drawn butter with some extra funk and tart cedar wood coming through in the finish. Other notes of vanilla, pie crust, and cereal malt. Super soft palate. Great beer all around.

On tap at Chez Moeder Lambic Fontainas. Hazy golden with a thick, lacing head. Intense woody aroma with sour fruit and lemons. Wood, sour fruit, hints of marcipane and vanilla. World class.

Draught Very fine & dense head and some lace, just off-white, over veiled orange-ochre beer. Sherry and dry hops, Bretts, leather, nectarines. BIt of sulphur too. Light citrussy, piney flavour, flowery, dry hops, immortelle "straw"flowers. Very refreshing, great light beer with some slight slickness. Another superb new try by Jean & Ivan - could anyone better that team?

Meget let og drikkelig, korn, halm, grape, gylden, uklar, hvidt, tæt, kort skum, sur men bestemt ikke for meget, tør og livlig. den er bare lige til at drikke.

UPDATED: MAY 30, 2011 Subtle complex aromas stilling around a quiet but present bretty prescense. Sour tart pretty flavor with tons going on in background. Amazing beer.

Had on Zwanze day @ The Avenue Pub .. . Pours a banana skin gold .. light foam .. . very slick stuff .. . pickle, hay, more dill, and pineapple .. . unique and tasty .. . . ..

Head: small, white, foamy
Colour: very hazy blond
Smell: lots of wheats, a little bit of hops, decent sourness
Taste: wheats come first and blend over superbly with the sour and bitterness level of the beer, this is deff. beter than what i’ve expected of a "sour witbier" really nice !

750ml Shelton bottle, vintage 2010. so this beer has developed a whole lot since it was released. this is a good example of what a perfect wild ale would taste like! underrated loon!
