COMMERCIAL DESCRIPTION
Did Scott really add chilies to a lambic? Sure tastes like it...or has micro-flora been secretly emigrating form Mexico? You be the judge. As with traditional lambics, this beer was brewed with raw wheat, and then aged in oak barrels for 3 years. Today is the first time this lambic has seen the light of day.

Cask at Blind Tiger for Captain Lawrence event - nice fruity tart and nice sour note. Some wheaty grains and sweet malty notes. Hint of hot pepper/actually not too much. spicey finish on the back of the throat.

Light nose of sour, wood, very faint pepper and vegetal character. Flavor had a bit more pepper but not overly spicy. Some sourness and a bit of astringency from the wood.

Cask at Blind Tiger. Pours clear gold. Aroma is sour fruit with a very faint peppery note. I expected some more pepper flavor, but there was very little to be found. Not terrible, but definitely disappointing.

On cask at the Blind Tiger during their Captain Lawrence event. Pours a just clear golden amber. Sweet toast, soft sweet wood on the nose. Smooth, light acid and sourness. Just the very faintest hints of pepper, but I was searching hard for it. Apparently from talking with Scott and Dave that night, they changed the spelling of the beer from Chili Lambic to Cjili Lambic since the heat had faded in the short time they had gone from tasting it to serving it up at the event. Would have loved to taste this with a whole mess of heat in it. Mostly just nutty almost acetone notes, with some toast as well.

Cask pour at Blind Tiger as "Cjilli Lambic". Orange pour, still. Some light sour tones, spice and muted pepper flavors. Lacking body, also mildly warm, depends on your tolerance for hot how much this will effect you. Didn’t need a large pour.

Draft. Pours clear gold with a thin white head. Spicy peppery aroma with light tart fruity notes. The flavor has good pepper notes, but isn’t overly hot, with wheaty notes, a light funky sourness, and just a hint of sweetness. Not bad.

Tap at Blind Tiger. Pours a clear orangish copper with standard white head. Aroma is oaky and smoky with a touch of tart fruit. Flavor is weird: some interesting woodsy notes with red pepper and cherry. I can’t articulate what I tasted. I swear there was a distinct "food" this tasted like, but I could never figure it out. Honestly, I kept flip-flopping about whether this was good weird or bad weird. I settled on good weird.

on tap at Blind Tiger. my last beer of night although i would have reordered drinking order of 4 new beers knowing what i do now. pours a standard golden yellow. tastes of chilli peppers but not in a bad way. its slightly sour and i also get white grapes. this was poured through gravity system and i think this would have benefited from added carbonation of standard tap but i enjoyed none the less.

A bit misleading the 2008 is when this project began, the first time it was served was in 2011 at Blind Tiger 3.30.11. Pours a clear golden body with a faint white head that quickly diminishes. Aromatically lightly sour, light acetic acid, and spicy pepper tones (actually pretty muted). Very light spiciness, much of the lambic sourness is very mild on the body, also feels a bit thin, the abv must be low or maybe well hidden secondary to the peppers. Finishes warm from the peppers with a light nuttiness. A fun experiment for sure.
