This is a beer that will make you rethink your definition of beer. It doesnít taste like any beer youíve ever had, yet it doesnít taste like anything else either. Pushing the limits of brewing is what makes this job so much fun. Malted barley, wild yeast, hand picked Muscat Grapes, and French oak wine barrels are just a few of the things that went into crafting this beer. Breathe deep, take a long sip, and enjoy the creation in your hand.

Aroma has slight malt, a little sour, but mostly dry wine like sweetness. Appearance is a orange clear that poured with some head which died quickly. The taste is dry and very cider or dessert wine like. Sourness is present, but accompanied by a full sweetness. Very frothy, but also dry.

Lactic sour, oaky Woody, dry grape, white wine aroma and flavor. Not too sour, maybe 4 or 5 of 10 sour and virtually all lactic, but with a little earthy funk in the finish. Carbonation dies fast. Really complex and balanced and a solid sour. A notch below the greats I think with the low dying carbonation and the earthy funk in the finish ( but the earthy funk does compliment the dry oaky white wine and balances with the lactic sour, the earthy funk balance may be a benefit for some... And the more I drink the more I like the balance the slight funk provides). Bumping up a notch the more I have. So complex and so good, only negative now is the lack of carbonation. ---Rated via Beer Buddy for iPhone

Bottle shared at tasting. Light yellow pour. Nice funky tart aroma. Taste follows. This is really well balanced between the tart and funk. Great stuff.

375ml bottle, big thanks to phaleslu for sharing. I got the last 3-4oz. 2015 batch. Wow. Awesome smell. Big, funky, mildly cheesy, oaky nose, with a nice amount of grape character. Hazy golden color. Ring of white head. Some bits of lace. Wow, great flavor too. Awesome moderate to bigger sour taste, moderate sweet. Just a very mild spicy bite. Medium-plus body, mild chewiness to it. Lighter, kind of crisp carbonation. Mild dry in the finish. Awesome funky aftertaste. Very nice sour.

375 ml bottle via trade - thanks again, Charlie! 2015 vintage. Pours a hazy gold with almost no head. Aroma of white wine, lemon juice, oak, herbs and spices, dusty grains, plum skins, wildflowers - really sharp and fresh and tart. Flavor of white wine, plums, lemon, wet hay, grass, mild spices, vanilla, wildflowers, apple, funk, and tannins. Medium-bodied, with modest carbonation and a fruity, vinous, funky, tart mouthfeel that starts cleaner and muddles up over time. Really good but I was picky on this one since Iíve been excited for it for a long time. The flavor and mouthfeel just donít deliver like they could, especially based on the aroma.

Draught at the Merchant, 2/9/16.
Bright flaxen-yellow body shows a light to moderate haze and is topped by a medium-sized white head that slowly fades to cover.
Spice and herbs come out in the nose, up front, and are joined by a buttery oak character that is mitigated somewhat by a strong lemon-like citrus element. Hay and wheat-like graininess in the background is pleasing and helps keep things light and beer-like, while the grape character seems only lightly apparent from the nose (more estery and spicy than tremendously wine-like). Brett shows key limes, pineapple and soft guava notes, lending brightness.
Buttery oak and rich, developed brett acids contend with a lightly grainy maltiness that adds a crispness in concert with the tart acidity and light grape must qualities. Light sweetness helps balance (a light, honey-like pale malt) and though itís quite woody and barrel-influenced, itís never astringent/husky. Floral and fruity notes emerge with warming, but I can never quite shake the slight overabundance of buttery oak that does not go well at all with what the bright, tart, lighthearted brett and grape notes are trying to do. Carbonation is moderately tight, though a touch loose at times. Texture ranges from grainy to softly malty with a touch of oak slickness to it as well. Perhaps this seemed more revolutionary 8 years ago? Itís certainly a very competent sour, but doesnít strike me as the best of the best.

Draft at Bru Craft during Sour Bowl II. Slightly hazy bright gold pour with just a slight fizzy white head. VERY oaky sour with some nice vinous juiciness. Muscat grapes. Golden plums. Apples. Nectarines. Applesauce. Lemon. Pepper. Oak. A sharp mix of gentle amber fruit, giant tartness and huge tannins. Medium-full bodied. Seems it might not work but somehow does. Quite shocked. Pretty extraordinary!
