One of the first beers I brewed after moving out to California to begin my brewing education was a Pale Ale. This version is a true testament to the influences the Wild West had on my early brewing. My Pale Ale is loaded with US-grown Cascade, Crystal, and Columbus hops, so be sure to take a good sniff to enjoy their robust aromas before taking your first sip. Sensory Profile: An aromatic beer with notes of citrus, pine, a noticeable bitterness, and a touch of malty backbone to help balance it out. Food Pairing: Foods with a spicy kick are a great match, as the bitterness of the hops will help to cool the palate before your next bite. Mexican food and pizza are natural matches.

12 oz bottle from BOTW (Rochester), served at cellar temperature in a tulip glass. BOTTLED 12032013 (!)

App.: Clear light amber with a decent, fluffy, off-white head. Aroma: Fruity hops, grapefruit, lightly peppery, fairly forward melanoidin/caramel maltiness, a little dusty. Palate: Medium body and medium-ish carbonation. Flav.: Mostly citrusy hops, a little flat compared to the nose, herbal, slightly floral, reasonable Vienna/Munich malt with some graininess; dry with fair bitterness and a kinda dusty, vague finish.

Too old, too bad.

Bottle. Nose is heavy on the caramel and pine, doughy and somewhat spicy. Pours hazy copper with abundant carbonation and a large sudsy beige head. Taste only lightly sweet with light bitterness, lightly grainy under the citrus but not too bad, green leafy hops character on par with the strong caramel, which is dominant here, and lesser pine. Crisp, clean, refreshing, but I’m not returning its calls.

Bottle. Pours a clear copper body under a one finger frothy white head. The nose is just lightly hoppy with some light caramel and pale maltiness. The flavor is moderately bitter with some nice citrus and resiny qualities over a lightly sweet caramel malt base. Rather clean and crisp. Light bodied with soft fizzy carbonation and a nice lingering hoppiness. Rather nice straight forward APA, rather fresh and thirst quenching.

Bottle pour. Brown orange in glass with one finger of white head. Fresh nose of sweet malts, caramel, and faint piney hops. A little soil. Light body. Crisp and dry, semi-bitter. Sticky pine hops. More candied malts. Cooked vegetables. Similar to English pales. A little one dimensional.

12 ounce bottle. Tawny amber orange color. Small white head. Sweet caramel malt nose. Toasted malt flavor balanced by complex citrus hops. Slightly bitter and spicy with notes of toasted nuts and subtle pine. Deliciously balanced.

Pours a hazy golden brown from the bottle with thin lacy off-white head that leaves moderate lace. Aroma is resinous pine hops with a clean caramel malt backbone. Hops have fallen off on the taste, but I bet it was nice when truly fresh. Every beer I have had from this brewery is solid.

Pours a beautiful slightly cloudy light golden color. Looks awesome. Small head. No lacing. Aroma is sweet with mild hop character. Before I take a sip, I get a feeling this is well balanced. Taste confirms that with a beautiful balance for my taste. I’m not a hop head so this works for me. Malty and sweet up front and then hoppy aftertaste but again, it’s balanced. Great pale ale.

Draft at Plan B West Hartford. Pours a clear, light amber color with a white head and some lacing. Aroma is hoppy, some citrus, grapefruit. Medium on the palate with creamy carbonation. Flavor is sweet, malty, bready, some pine hops, some light citrus, with a clean, piney, bitter finish. A nice APA.
