COMMERCIAL DESCRIPTION
This is a big, malty and rich Belgian-style abbey ale. We combined both US- and Belgian-malted barley and a specially selected yeast strain to produce a truly unique beer. This beer was brewed as a thank-you to my father Vince who has helped to make this brewery a reality. It will be brewed once a year and released on Father’s Day. This is a great beer for aging, so lay some down and try it in a year or two! Sensory Profile: Ripe fruit, figs and chewy malt are a few of the flavors you will encounter in this beer. There is an underlying roastiness and caramel sweetness that comes through toward the end. Hops play a background role to the malt character of this brew. Food Pairing: This beer can stand on its own as an after-dinner drink. A rich brew to sip and enjoy, it also goes great with desert or roasted meats. Use this beer as you would a full-bodied cabernet or an aged port.

on tap at the Dutch into a chalice. amber hue short off white head with average retention, light lacing cap. scent is clean if not boring. taste is slight clove, dark fruits, hint of booze. medium bodied and warming. not a bad dubbel, would not consider this a benchmark by any means.

Bottle at CGarvie tasting. Old-Skool label! It pours deep amber-brown with a thick yellow-white head. The nose is rather sweet...raisin, sultana, white grape and brown sugar. The taste is earth, light bitterness, spice, citrus, candied peel, raisin, dried fruit, brown bread and cherry. Medium body and fairly high carbonation. Not a whole depth of flavour. Ok.

From ZDK’s tasting. Vintage 2006. The aroma is sherry-like, oxidized, very nice. The appearance is clear amber/red, white head. The flavor is like the aroma, sherry, bread, fruit. The finish is sweet, sherry. Excellent.

750ml bottle, 2006 vintage, shared by Matt at Zach & Matt’s tasting. Pours brown with a small foamy tan head. Aroma is booze and dark fruits and spicy yeast. Taste is really beautiful, some sour notes along with some sweet notes, a great balance. It’s like the beer has totally mellowed out with age. This was really enjoyable.
