Commercial Description:
This beer is an American adaptation to the classic Belgian style of beer known as a Tripel. Historically Tripels were brewed to have a very light golden color, a moderate hop presence, and be around 9% alcohol. But we are not in Belgium, so I decided to crank up the hops, dry hop the beer with American Amarillo hops, and brew it to 10% ABV. This is our American Tripel, enjoy. Sensory Profile: Enjoy in a goblet or wine glass. Tropical fruit and honey are the two biggest aromas coming from this lively brew. While the hop bitterness is not as powerful as an IPA, the hop flavor melds nicely with the fruity flavors created by the imported Belgian yeast strain used. Food Pairing: This beer goes great with roasted vegetables, fish and rotisserie chicken. And it can be used as a aperitif before dinner with shrimp cocktail.

Draft @ Monster B’s, Stamford, CT. Clear gold body with thin fizzy white head. Strong honeydew nose. Sharp, fizzy carbonation gives this beer a crisp, dry palate with a gradual wetness. Golden apple and champagne notes. Very refreshing and a real sipper.

Effervescent gold with a sun-ray haze and a thick stubborn head that forms slowly like wet cement where you can see large ripples in the glass. White pepper, pineapple, bubble gum aroma. Strong carb bite on the tongue initially, tempered a bit by the creamy fluffy head. Dry citrus peel, gentle pepper, filling mouthfeel, rich and velvet honey, cherry blossom. Poured the murky goodness into the glass and it became a dark dijon mustard and took on heavier notes of wild nutty wheat and strawberry. Classy brew, too bad I didn’t share it with anyone.

Bottle at the RB Rochester Gathering, Aug. 30/ 09. Thanks, ElJefe! Poured a medium gold color. Long lasting white head. Very nice aroma, slightly spicy with a little citrus, not overpowering. Nice sweetness in the front, with a peppery spiciness in the finish, very good.

Bottle at the RB Rochester Gathering, Sept. 09. Thanks, ElJefe! Slight haze to this, yellow. Very light, delicate lemon nose. Small carbonation, thick, syrupy, fruity palate. Nice dry finish. Really enjoyed it.

75 cl bottle at the RB Rochester Gathering, Sept. 09. Thanks, ElJefe. Glowing golden color. Herbal, fragrant aroma with lemon and honey. Spicy, peppery flavor with honey, citrus, rich golden malts and good fruit. Very nice balance. A well-done tripel.

750mL bottle from the first batch. Poured crystal-clear brighter golden with a huge, creamy cap of white head.. left sticky lacing on the glass. The aroma picked up earthy white pepper and degraded, but definite floral Amarillo character over a pale and lesser bready malt base.. tangerines, vanilla, and a hint of oak were laced through it. The flavor had a whole lot more floral hoppage than your traditional tripel, but that was the intention.. bready malts at the core, again picking up a little vanila.. dry white pepper, coriander, and oak joined the hops on the edges.. finished spicy and a touch hot. Medium-plus bodied with a bit too much carbonation on the palate.. oxidation was starting to set in, but it still held itself together nicely. I’ll bet this is totally different fresh, and I’m down for trying it.

Lightly hazed gold pour. Aroma of pepper and corriander. A flavor of brown sugar, light malt and an odd likeable bitter finish. Medium bodied with very good carbonation.

On tap at Rattle ’N’ Hum (Midtown, NYC): Pours a bright, light golden colour. For the ABV percentage, this beer is dangerously drinkable and is pretty much punching me in the face. It’s aweome. A variety of hops takeover the flavor with a mix of honey and fruit. Flavorful and strong- simply wonderful. #051 on 07072009, DG.
