We donít have many rules at Carton Brewing and those we have made for ourselves. In general though, we strive for drinkability through balance and harmonization of flavors. But even self-imposed rules are meant to be broken. With Epitome we decided to embrace the teenage metalhead in each of us and get discordant with a seriously hoppy, high gravity, black ale. The only notions accepted were to make it bigger, bolder, hotter, & faster. A Beast. The ABV had to push past 10, the black had to be "none more," and the hops had to be American and piled on like a double bass drum kicking faster and harder. Drink Epitome because things worth doing are worth over doing.

Pours a dark black with little brown head. Has an incredibly strong floral and citrus hop taste. Taste is powerful with a hop blast of citrus, grapefruit, and floral, also with malts. However, there is no coffee appearance here. A strong bitter hop aftertaste. Had a hard time rating this as the beer tastes amazing but as a black IPA, itís missing key characterists of coffee and/or chcolate. Overall, itís phenomenal though!

Can. Pours black off white head. Nose/taste of pine, resin, roast chocolate, coffee and earthy chocolate. Medium body.

Draught @ One Mile House, New York Pours pitch black with a smooth brown head. Aroma of fresh grassy hops, roasty malts, licorice and fruits. Taste is smooth, fruity and really hoppy with some roastiness, resin, licorice and citrus. Finish is smooth, hoppy and grassy with some licorice, resin and grass. Heavy, but tasty black IPA.

Brewery sample and growler. Black with a thin tan head. Aroma is piney earthy hops with a dark chocolate malt background. The taste adds bitterness and sweet malts with bitter dark coffee on the finish. Insanely smooth with no evidence of the 10% abv, low carb. Wow, Excellent, a very dangerous beer given itís drinkability. --- Rated via Beer Buddy for iPhone

half growler shared by dmac and none for a half wit that stopped by and exited early-tight tan-black. A-resin, dk malt-roast. T-juicy rein/spice hop bite, dk malt-roast, some alcohol heat.

Growler, generously given by Dmac after the birth of my son and the worthwhile saga that followed, huge thanks bro, needed this one. Pours out pretty much black with a moderate tan head. Aroma is toasted malt, some meaty smoky notes, light earth, citrus rind and some bitter acidic hops. Taste is complex, bakerís chocolate, lightly burnt toast, meaty smoke, grapefruit and citrus rind hop bitterness. Alcohol burn is in there, but for the ABV it is very mild; light lingering sweetness on the otherwise bitter and lightly boozy finish. Really nice beer.

Draft. Black with 2 finger tan head. Piney citrusy aroma. Taste has a substantial chocolate malt base to cut the extreme bitterness. Moderate alcohol burn. Thick syrupy palate with sufficient carb. This is a big boy but it's quite tasty.

On tap at Joe Canals West Deptford.
Appearance: Deep opaque garnet body with a short and dense khaki colored head, good retention.
Aroma: Sort of a spoiled milk presence with roast and pine. A bit offensive.
Taste: Mild milk chocolate with the spoiled milk presence from the aroma. Pine is strong on the back end with a metallic presence on the finish. Chocolate undertones run throughout.
Palate: Full-bodied with moderate carbonation.
Overall: This drinks a bit like Victoryís Storm King, but thereís this presence that is absolutely off-putting to me. I will give this a try the next time it is released as something may have happened to this batch, but this one I am not happy with.

32oz growler shared by dmac! Pours a dark brown/almost black color with a finger of foamy khaki colored head. Aroma of sweet citrus fruit, chocolate malts, and grapefruit pulp. Taste of grapefruit, chocolate malt, citrus rind, burnt toast, and a piny finish. Awesome beer!
