We don’t have many rules at Carton Brewing and those we have made for ourselves. In general though, we strive for drinkability through balance and harmonization of flavors. But even self-imposed rules are meant to be broken. With Epitome we decided to embrace the teenage metalhead in each of us and get discordant with a seriously hoppy, high gravity, black ale. The only notions accepted were to make it bigger, bolder, hotter, & faster. A Beast. The ABV had to push past 10, the black had to be "none more," and the hops had to be American and piled on like a double bass drum kicking faster and harder. Drink Epitome because things worth doing are worth over doing.

2015 BJCP Category: 21B Specialty IPA - Black IPA

AROMA: Huge grapefruit hop aroma. Almost a sweet, bubblegum or juicy aroma as well. Unfortunately, no malt, roast, or chocolate notes. 9/12

APPEARANCE: Opaque dark brown/black. Moderate tan foam retains and laces fairly well. 2/3

FLAVOR: Grapefruit and citrus flavors throughout. Some dank resiny notes at the apex. Hop-forward for sure, but bitterness seems lower than 100 IBUs. Malty presence, but no chocolate/coffee/roasty notes. 15/20

MOUTHFEEL: Medium+ body; relatively low CO2 with a creamy texture. Alcohol is well masked and imparts only minimal flavor and warmth. Lingering resiny aftertaste. 4/5

OVERALL IMPRESSION: I enjoy the taste a lot but wish there was more black in this Black IPA. Drinkability is impressive. 8/10

Poured from a can. Aroma is malty with balanced hop notes. Some toasted bread, dark caramel, toffee, light roast and nuts. Moderate pine resin and grapefruit notes with some light woodiness. Pours dark brown, but not quite black with a medium sized, thick, right tan head that is slowly receding and lingers as a thin film. Flavor is slightly sweet with some toasted bread, dark caramel and nuts. Hints of chocolate and roast. Very bitter. Moderately strong hop flavors with a strong woody note. Some lighter grapefruit and pine. Some light alcohol spice. Mouthfeel is medium bodied with medium carbonation. Low astringency and medium low alcohol warmth. Overall an alright beer, but definitely not my favorite. The hops smell and taste very much like Northern Brewer which is quite possibly my least favorite hop. I’m also not a fan of Black IPAs or whatever this is. So bitter. Very dry.

Hazy dark brown / black color with a small, tan head that left nice lacing on the glass. Aroma of floral hops, pine, light citrus, roast. Taste of roast, dark malts, some cocoa, tobacco, citrus, pine, resiny finish.

Woah. I didn’t know this was 10% when I tried it. Pours a murky brown with a thin foam head. Aromas of pine and roast and resinous hops. Light coffee. Taste is on the bitter side. Slight alcohol in the taste.

This is my type of brew. Imperial IPA and it lives up to what it is. It’s backed with what tastes and smells of a dry hopping with plenty of dark malt to balance this amazing brew. The Malt does play second to the dry hop. Enjoy

This poured a dark brown with a beige head. Aroma was big resin and herbal hops, very light roast. Flavor similar, juicy and resinous, big strong booze beer, lightly roasty. Nice stuff

On tap at owl farm. Ok black ale but nothing outstanding as a black ale. Drinkable.lace line with lots of roast.

Draft at Fool’s Gold, 12/5/15. Pours basically black with a thin ring of head and light, spotty lace. Aroma has a lot of longer with lighter roasty. Roast is much strong in the flavor. Gets almost burnt on the close. Fairly full bodied. Really nice take on making something somewhat like a Black IPA, but also not really a Black IPA. Another hit from Carton.

UPDATED: MAY 4, 2015 Pours black with a one finger tan head with a one finger tan head. Aroma is of pine, citrus, dank hops, tropical fruits, coffee, and some light chocolate. Taste is about the same as the aroma with light roasted malt notes and some molasses notes. Has a medium body with a semi creamy mouthfeel and a moderately bitter, medium-long finish. Overall, a tasty, pretty complex black IPA that I would definiteltly seek out.
