COMMERCIAL DESCRIPTION
Cascade Apricot Ale is based on our Temptor Triple Ale that has undergone over 8 months of lactic fermentation and oak barrel aging. Ripe NW Apricots are fermented with this beer for 3 additional months. This hand packaged and bottle conditioned ale will only get better with age ... good luck waiting.

Serve at 45-50 Degrees F.

2011 project. Super sour nose with more funk than expected, slightest hint of fruit. Taste follows the nose almost identically. Not as fruit forward as I expected it to be, definitely sour. Reminds me of a quality gueuze.

750ml corked bottle (2014 Project, 7.6%ABV) pours a slightly hazy golden orange color with a generous white head that retains well and leaves some spotty lacing behind. Aroma is apricots with some lemon and yeast and hints of grains. Taste is a lemon tartness with a light fruity and malty sweetness and a dry apricot finish. Medium bodied with abundant carbonation that tickles the tongue. Overall, a well crafted sour ale that is both tasty and balanced.

Bottle: Cantillon Tumbler: Small off white head. Hazy darker yellow body. Aroma is a beautiful mix of funk and apricots with hints of flowers, wood, wild yeast and a little note of acidity. Flavour has more acidity than the classic Lambic beers from Belgium. But this acidity is still good. It’s on the edge of good acidity. There’s funk, white wood, clear apricot tones, light dry, wild yeast... Aftertaste is tart apricot, woody bitter and some herbal malts with a funky jacket. Low carbo, tart light creamy aciditious mouthfeel, between medium and bit more medium bodied. Good beer, but misses some depth, but than again far from 1 dimensional!

Bottle thanks to Maria at the blåbær lambik release. Pours hazy yellow with a small white head. Aroma is funky, lactic sour, apricots, oaky notes, vanilla. Taste is sour, lactic tart, apricots, light funky notes. Damn, this is good!

Dégustée chez Alexandre Mathieu. Cheers mate! Bière mi blonde mi orangée, parfaitement voilée et présentant une tête mince mais durable. Peu de dentelles mais beaucoup de volonté. Superbe nez de vrais abricots (séchés) , de raisins verts, de levures saison et de citron. Des arômes vraiment bien construites, complexes et magnifiquement ficelées. En bouche, il faut se concentrer pour y retrouver l’abricot qui faisait tant vibrer mes narines. Le citron y est ainsi qu’un houblon surprenant qui me rappelle un houblonnage à froid que je n’avais pas vu venir. L’acidité est évidemment au rendez-vous, c’est du Cascade tout de même!

This breweries stuff is unbelievable! Only down side is huge money for this 750 bottle....forty bucks ouch. Never the less worth it as it has so much going on. Huge apricot aroma off the start. Poured light orange. Light head. Flavors of everything, from hay, barnyard sweet apricots and dried apricots ending of very tart acids. After all that the fresh apricots cruise back in for the finish line. A+ You gotta try this too.

An slightly orange beer, a head is medium sized and blond. Balanced and pleasant aroma, strong apricot, sourness, some lether saddle, green apples and fruitness of grapes. Very complex and great aroma. Taste is strongly sour, grapes, apricots, earthyness, some lether. Medium bodied, strong carbonation, slightly sticky end. The great and complex beer.
